WIAW Back to the Party

Hey ya’ll! Sorry I was gone for so long, but I decided to take a mini vacation from my responsibilities (lets be serious, blogging is my only one right now haha). I’m back again because I have so many wonderful posts of restaurant reviews, recipes, and other great surprises for ya’ll! Guess who’s blog is almost one year old? MINE! That is exciting. In the mean time I’m going to celebrate my favorite weekly party WIAW, which is hosted by Jenn. Seriously love it. It always puts me in a better mood to stare at beautiful pictures of food. Not that I’m in a bad mood because I killed my biochemical nutrition paper and the final. 4.0 for my final semester and Dean’s list yet again. Go Lindsay! Lets get it started in hurrrr (oh god I am not that lame)

Introducing one of my favorite combinations, cake batter oatmeal. You seriously can’t go wrong with anything that is cake batter flavored or themed. Plus the pile of sprinkles adds a happy cheer to this bowl of deliciousness. I had to top it with peanut butter for a creamy texture. It was definitely a good decision. Just looking at this bowl makes me happy. It is really hard for me to decide if I like oatmeal or pancakes more for breakfast, so I think I’m just going to say it is a tie. I have a ton of oatmeal recipes in my brain right now, so get ready in the next month for some epic, scrumptious recipes that will make you drool and run out to go buy oatmeal immediately. Score.

What is this? An apple? No. Um what? Yes, this is a pear. It is called a papple. Did I buy it partially because of the name? Yes, but also because I love pears and the fact that it looks like a freaking apple. My mom and I were at Central Market to get apples and some fresh fish when we ran across this interesting specimen. We decided to get one for each of us to try. The texture was very odd, but delicious. It was crisp like a pear, but had a crunch like an apple. The flavor was not overly sweet with a small amount of tartness to it.

I go weak for a good salad. This is my healthy version of a Chinese chicken salad. I left out the unhealthy fried crispy strings. It has avocado, mandarin oranges, sliced red onion, carrot sticks, grilled chicken, lettuce, and a nice sesame thai sauce that is slightly drizzled over the salad. Winner winner healthy chicken dinner. I love making popular salads a lot less calorie packed. I’m going to do an eat this, not that post in regards to my recipe redux of fatty salads that people consider healthy at many popular restaurant chains.

This sort of looks like a pile of mush, but a really delicious pile of junk. Don’t worry I didn’t eat this all in the same day. The base of this entire box of goodies is lettuce. It is topped with onions, mushrooms, carrots, edamame, curry chickpea salad, tofu in pesto, broiled cauliflower, sauteed mushrooms, a little piece of salmon, some grilled zucchini, and some black olives. This was one of the most filling meals I’ve ever had. My favorite thing in this box of whole foods salad bar goods was the curry chickpea salad. It was not over powering with the curry and it had a sweet flavor with the mango and edamame in it. Yum. I love the salad bar.

Every since my mom’s birthday, we have been on the look out for the black forest parfait at Whole Foods. However THEY HAVEN’T HAD IT. Seriously depressing. We decided to try this lemon berry parfait instead. However since we are total idiots, we didn’t realize that the lemony goodness was on the bottom of the cup, so we were eating it and being like WHERE is the lemon dang it. Once we discovered the lemon it was like ooooo that is good, but still not as great as the black forest one. That is just my favorite. You can’t go wrong with chocolate and cherries. Noms.

Barf in a bowl? It sort of looks like it, but instead it is my delicious creation with my left over spaghetti squash. It is the healthy version of mac n cheese. It is crazy good. I know it looks disgusting to look at, but trust me when you have a bite it it just cheesy goodness that melts in your mouth. I will definitely have to take more pictures and make this recipe again, so I can actually share it with you. It came to me on a whim when I got home from volleyball practice. I was in the mood for cheese (my favorite food group – you are obviously sick if you don’t like cheese), so I was like hmm mac n cheese, but let me make this healthy.

Healthy snacks by Lindsay. I am getting good at this. I am definitely going to add this to my snack post that is coming real soon. This was homemade cinnamon chips topped with chopped strawberries and a little sugar free chocolate syrup. Dessert nachos. This is the way to go. It was cinnamon sugar that is dusted on the tortilla. It makes for a subtle sweet flavor. I definitely can’t wait to make more of these with different toppings.

Heaven in little squares? You bet. I have one fatty awesome treat coming for you all in the next few weeks. These are petit fours filled with Bavarian cream and lemon filling. I know you are all now drooling. I have more pictures, but I’m definitely going to have to hold back on ya’ll for the meantime because you will be crying and yelling at me to give the recipe to you immediately. These things are fantastic. My mom and I made them for my volleyball team, and we are getting ready to make some more for a wedding shower. I think I should just quit at life and open a bakery. Food truck maybe? If life doesn’t work out then maybe that will be the plan.

I hope you all have a fantastic Wednesday. I’m currently working on some diet plans for a client I have. If this is a success, I’m totally going to use this person as my business card for my future nutrition practice once I get my license. Also I have tons of artwork I’m doing plus I’m working on tons of scientific papers for my professor. I’m out on the job hunt too, but it isn’t looking good since I’m going to Europe for two weeks. Oh well, those people are losing out because I’m awesome.

Breakfast Cookies

Hey ya’ll! It is Sunday and I’m currently dying. This will probably be my last post until Wednesday because I need to focus on my paper on the biochemistry of type 2 diabetes. I need to really rock it out and study for my biochemical nutrition final/all my other finals. Senior problems, but really. I have the worst case of senioritis, which is not really beneficial at this moment in life. I just need to make it to Wednesday and I can be done with undergrad life forever! Since I’m on a break from working on my paper, I thought I would share a delicious recipe with ya’ll! Cookies for breakfast? Umm yes, you heard me right. This is a super low calorie recipe that provides a ton of functional aspects with the oatmeal, bananas, and cinnamon! You can actually eat these anytime during the day, but I call them breakfast cookies since the ingredients are typically what I eat for breakfast.

Breakfast Cookies
2 extremely brown bananas
1 c of old fashioned oats
1 tbsp cinnamon
1-2 sprinkles of chocolate chips

1. Preheat oven to 350.

2. Take two bananas (make sure that they are brown or starting to brown because it is easier to mash super soft bananas) and mash them in a small mixing bowl until it has reached a smooth and creamy consistency.

3. Add in the oatmeal, chocolate chips, and cinnamon. Mix thoroughly.

4. Take a spoon and make a small dollop of mixture on a baking sheet. If you do a small-normal size, it will make around 12-15 cookies. My batch made 15 cookies with some being on the larger side, so it could potentially make up to 18 cookies if they are all small.

5. Place in oven for 15 minutes and cook until brown. You may want to cook them a little longer if you want them crispier because when I cooked them for 15 minutes the bananas still provided a small amount of mush, but I like that. If you don’t, just cook for longer.

This is such a healthy and nutritious snack to keep around your house or apartment. I placed two-three cookies in a snack size ziploc bag to carry around in my backpack to class. It is such a good idea to do since this recipe contains a lot of fiber, which helps keep your stomach full. The oatmeal provides a ton of functional benefits such as increasing appetite control hormones so you don’t get hungry right after eating, the beta-glucans in the oats improve immune system functions, they can potentially help decrease type 2 diabetes through lowering insulin resistance, and they help control blood pressure. Now you know why I always try to start my day with oats! If you consume more functional foods in your life, you will live a happier, healthier, and potentially longer life. Bananas have a ton of functional benefits too such as protection from cardiovascular disease due to potassium and fiber in bananas, protection from the development of ulcers, and promote kidney health. Finally cinnamon provides a ton of benefits. You definitely need to use more spices and herbs in your diet because they have tons of hidden functional properties. Cinnamon helps lower your cholesterol, regulate your blood sugar thus impacting diabetes, plays a role in cancer prevention, it is an anti-bacterial and an anti-clotter, it helps relieve joint pain from arthritis, and works with brain health. Wow, cinnamon you rock. Sorry to get all science nerd on ya’ll, but functional foods was one of my favorite nutrition classes. Plus I work for my functional foods professor now in her lab studying tomato and broccoli’s effects on prostate cancer cells. It is pretty awesome!

Eggplant Parmesan Gets Healthified

Hey ya’ll! Hope everyone is having a good Saturday. I swear I am getting so forgetful these days. I just remembered that I had a paper due at midnight tonight in my online philosophy class. It is not a fun assignment either. Boo to doing work. Luckily my mom and I are working on a delicious baked good hat I will definitely be sharing with ya’ll in a couple of days. Until then I’m going to have to share another delicious recipe with ya’ll: Eggplant parmesan. Eggplant parm can pack in a ton of unnecessary calories, but if you follow this recipe then you will be able to lose weight while eating great!

Healthified Eggplant Parmesan
1 eggplant
1-2 tsp of extra virgin olive oil
1 fresh tomato
1/2 c. of tomato sauce
6-8  thin slices of mozzarella
1 tbsp of Italian seasoned bread crumbs
pinch of salt

photo(5)1. Preheat oven to 375. Slice eggplant lengthwise into slices and place on a baking sheet. Sprinkle salt on top of the slices and drizzle a little bit of olive oil on each piece.

2. Cook in the oven for around 20 minutes or until the eggplant appears slightly brown.

3. Then place a small amount of sauce on each slice of eggplant (I had around four slices of eggplant, so it didn’t take that much sauce to cover lightly). Then add on 2-3 slices of tomato on each piece of eggplant. Next you add 1-2 slices of the mozzarella cheese (make sure that each slice of cheese is pretty thin that way you won’t be consuming a ton of calories and you will get the great meltability that you want). Finally sprinkle on some breadcrumbs and place into the oven.

photo(4)4. Cook in the oven at 400 degrees until the cheese is completely melted. Then remove from the oven and let cool for a few minutes until warm enough to take off the pan.

photo(1)I am in love with this dish. A great thing to serve along with it would be spaghetti squash (just another vegetable that I’m obsessed with). The cheese, when it melts, provides a nice creamy flavor to the crunch of the crisped breadcrumbs. The eggplant is soft from being cooked, yet it is crisp on the outside. It provides a nice contrast in your mouth. Also by only having a thin amount of sauce, there is not a ton of mess from this fantastic dish.

Italian food is one of the best good genres in my opinion, well besides Asian of course. However Italian food comes along with tons of empty calories and high fattening foods, so it is important to either modify the recipe or make smart choices when you are eating out! 11 Awesome, yet random facts about yours truly:
1. I’m a crazy nerd. Sometimes it can get pretty obsessive. If I don’t get all A’s, I sort of find that to be unacceptable. Trying to be perfect is hard, but someone has to do it. Plus dietetics is competitive, so I’d rather be above everyone.

2. Cupcakes are my best friend, well no, but pretty close to it. I can’t live without them.
DSC019513. I love to read. Seriously. When I get married, my husband better give me a bad ass library like the one in Beauty and the Beast. That would actually be pretty amazing.

4. I also love fashion. Unfortunately my wallet doesn’t. Hopefully my husband gets me an awesome closet like the one in Sex and the City (the movie – the one Big gets Carrie). I love that I’m talking about a husband when I’m totally single.

5. I’m obviously crazy if you haven’t figured that out from the last two facts. I like to fantasize a lot about life, so sometimes I totally get lost in those.

6. I have an addiction and it is called Breakfast. You seriously can’t tell me that you don’t love America’s favorite meal of the day? Really though. Breakfast led to brunch and brinner. Umm YES.

8. Speaking of talking on the phone, I have a fake sweet voice that comes out when I’m on the phone, ordering food, and at really random weird times. My brother makes fun of me for it.

9. I am a non-religious Jew. Oy vey, so is the rest of the pack though. Many Jews will tell you that they are culturally Jewish and not religiously Jewish. I don’t believe in god, but I do celebrate holidays because they are about remembering the suffering that has occurred to our people and how we have overcome it.

10. I’m a travel junkie. I wish I could do nothing for an entire year and just travel the world. Gosh Julia Roberts, you were so lucky in Eat Pray Love. Can I have your life please? Minus the whole praying part. I am going to go eat in Spain and London this summer, so score for me. Also Julia, now that we are speaking, how could you leave James Franco (in the movie)? Although you got a much more age appropriate hottie, so props to you.

6. Are you a morning person or a night owl? Definitely a night owl. I like to rage hard, but only after I get my 8 or more hours of sleep.

8. What’s your most memorable experience? Seeing as my life is pretty awesome, every moment that I breathe is memorable. Kidding, but only a little. Probably the time my roommate peed in someone’s laundry room at a party. Oh I just took it to the PG-13 level, get over it.

9. Do you have a dream job? Being the dietitian for the San Antonio Spurs. It will happen in this life.

10. What’s your favorite movie? So hard. This is embarrassing, but probably What A Girl Wants. Yet our poor Mandy Bynes is going through some hardships. Think of Ian! Come back to the light.

If you read all of this way to go. I’m pretty impressed. It was a bit of a pain to write. I do love talking about myself, but I’d rather talk about food. Foodie talk right there. I hope all of you have a good Friday. I’ll be dying since my legs are so sore from working out hardcore in the gym this past week. I’ll also be attempting to study for my biochemical nutrition final (in case a protest doesn’t happen), but lets not get ahead of ourselves since that class is B-O-R-I-N-G.

Pad Thai Spaghetti Squash

Hey ya’ll! I have survived my first final. It was really easy to be honest, but my make-up exam was kind of hard, which was shocking. It was all short answer, which the test is usually multiple choice, a few short answer, and a case study. Instead it was all short answer and a case study. Hopefully I did well. If not, it isn’t the end of the world since I rocked the final. So I have something super special to share with ya’ll: my recipe for tofu spaghetti squash pad thai. Maybe one of the greatest things I have ever experienced (let me rephrase that: greatest healthy thing).

Tofu Spaghetti Squash Pad Thai
1 red onion
1 spaghetti squash
1 c of carrots (already in thin stick form)
1 c bean sprouts
1/4-1/2 c of liquid egg whites
1 clove of garlic
crushed peanuts
a few pieces of cilantro

Peanut Sauce
2 tbsp white rice vinegar
2 tbsp soy sauce
1-2 tbsp brown sugar
1 lime
1 clove of garlic
2 tbsp of PB2 prepared with 3-4 tbsp of water

photo(1)1. Preheat oven to 400 degrees and slice your spaghetti squash into half. Carve out the middle of the squash that contains all of the seeds and discard into the trash.

2. Place squash on a baking sheet or in a pyrex dish with the skin facing the dish and cook for 40-60 minutes until soft.

3. Meanwhile drain tofu of all water and slice into extremely small pieces (or if you want larger chunks don’t cut down into fine cubes).

photo(13)4. Spray pan with non-stick cooking spray and toss in tofu (you can use 1 tbsp oil if you want it more crisp/fried like). Cook until light brown on sides.

5. Remove tofu from pan and toss in chopped red onion (you don’t have to add all of the red onion, I just added as much as I wanted there to be in the dish).

6. Cook for a minute or two, then add in chopped garlic (stir continuously, so it does not burn).

7. After a minute has gone by, add in the carrots and bean sprouts. You may need to spray the pan again with the non-cook PAM or add in some water, so the pan doesn’t burn.

photo8. Toss in the tofu to re-heat and mix with all the vegetables.

9. Move mixture to the side of the pan and add in the liquid egg whites. Wait until the liquid starts to solidify before moving around to turn into scrambled eggs.

10. Then mix all the ingredients together and then remove pan from flame to place on a burner for the meantime.

11. In a small saucepan or pot, add in the vinegar, soy sauce, brown sugar, PB2, juice of one lime, and a clove of garlic.

12. Heat on medium and stir until the brown sugar and PB2 completely dissolves.

13. Place vegetable/tofu mixture back on a flame to heat back up then pour the cooked sauce into the mixture. Stir until everything is thoroughly coated.

14. By this time the spaghetti squash should be done cooking, so remove from oven and let cool. Once the squash is cool you can use a fork to pull the “noodles” from the squash. Once you have the amount you want, throw the “noodles” into the vegetable mixture and stir well.

photo(2)15. Pour however much you want into a bowl and top with a handful of crushed peanuts and around 6-7 cilantro leaves. Then enjoy!

Seriously this is one of the best meals I’ve made for myself. I have a love for all types of Asian food, so when I realized I could utilize spaghetti squash as noodles in pad thai my world completely changed. The richness of the peanut sauce meshes well with the freshness of the cooked vegetables. You can’t even tell that the noodles are spaghetti squash. I think it is the sauce that really ties it all together. I even had so much that I have had leftovers for two days. Also I didn’t use all my noodles, so I made spaghetti squash mac n cheese, which I will obviously have to share with ya’ll another day.

photo(3)I think another thing that I like so much about this dish is all the wonderful colors in it. The cilantro brings a nice pop of green to the dish while it has a lot of warm colors in it such as the red from the onion, the orange from the carrots, and the yellow from the squash. Wow I sound like an art freak to be honest. What can I say I have transitioned from oils and pastels to food. Okay, no I am still doing art because I love it, but now I just have another medium to work with: fresh food. This dish is definitely a hit. Even the non-vegetable eaters would probably love this. The true test is to use it on a guy (not saying that all guys don’t eat vegetables, just most)!

WIAW (Life Without Plastic Bags)

Hey ya’ll! It is that time of the week again when bloggers around the world share what they are eating. It is one of my favorite link-ups, known as What I ate Wednesday. I bet there are other goods ones out there, but I just love to see what everyone is eating to get inspiration for recipes and blog posts. Thanks to Jenn for hosting this fantastic day! Seriously pure genius for coming up with it!

photo(3)Since school is pretty much over for me, I ended up going to my mom’s to study for finals and what not. Well I decided that I was going to cook up a storm in the house and make a ton of new recipes to share with ya’ll. So I drove over to the local HEB in my neighborhood to load up on groceries, but little did I know that there are NO more plastic bags (disclaimer: Yes, I actually knew, but I forget because this is sort of ridiculous). I’m all for helping the environment, but they should have plastic bags on hand just in case people forget. I have a million reusable bags, so I’m not going to spend money to buy another one just so I can carry my groceries like a normal person. Nope, I totally put everything back into my cart and rocked the no bag look. I got some stares.

photo(6)I was not going to let the plastic bag problem stop me. Although once I got to my house, I got reusable bags to help get everything out of the car. Now to the yummy part of the story. For breakfast I had chocolate covered strawberry cheesecake oats. Umm yes. I have an obsession with cheesecake oats (fat free cottage cheese + oatmeal). It seriously makes the oatmeal have a creamier and richer flavor to it.

I need to step up my oatmeal sharing game. Heck, I have so much to share with ya’ll. Maybe I’ll start posting two-a-day. That is a lot of effort for me, so probably not. Senioritis problems. You would think that maybe my second senior year I wouldn’t be so lazy, but no I think I’ve just gotten lazier as time goes on. At least graduate school will whip me into shape.

photo(4)So my family calls me snacky or snack monster, which is actually pretty nice I think since it could definitely be a lot worse. Hello, my name is Lindsay and I am addicted to snacks. I actually have an awesome post planned for the near future about healthy snacking. Since I love to snack, I decided that I need to come up with more healthy choices for snacks. Therefore apple nachos have come into the picture. You can do a ton of varieties with these bad boys. I decided to go the chocolate and caramel route, but you could definitely do granola, chocolate chips, etc. Pretty much anything goes good with these bad boys.

photo(2)Yes, I am one of those weird people that love salads. I could eat a salad for lunch and dinner if I could. The key to having a good salad is building it up with tons of healthy toppings. This is my healthy version of a Waldorf salad. It has grapes, apples, walnuts, celery, and chicken in it. Such a winning combination. Usually there is a type of gross cheese in it (yes, there are some gross cheeses out there), so I went sans cheese on this one.

photo(1)Three cheers for another healthy snack. I saw this on Pinterest a while ago, but it was for camping. Who needs to go camping to make a delicious treat like this? Not me. I made my version of a banana s’mores with marshmallows and chocolate chips. It was delicious. I will share how to actually make this when I post about healthy snacks, but just looking at it is making me drool and want another one. Like the apple nachos, you can do tons of combinations with this one.

I’m trying this whole thing were I am organized about my blog posts, and so far it is going pretty well. It just means that I won’t be posting up this recipe yet. However it is spaghetti squash pad Thai with tofu. Yes, it is as amazing as it looks. I’m seriously getting excited just looking at it because it is a beautiful dish. Plus I remembered I have leftovers in the fridge! Go me.

photo(7)MWAHAHA the snack monster has arrived. This is a not-so healthy, but not-so fattening snack. I have a passion for snowcones. Maybe a deep love too. I love going around to try all the snowcone stands in Austin. I have discovered a few more to try out and review, but this is from one of my favorite stands: Casey’s New Orleans Snowcones. You know I have to represent the city I was born in, so I’m a loyal customer. Plus these are just so darn good. This one is a strawberry cheesecake snowcone. The flavors are so rich in it and the ice is soft. I really despise when there is hard ice that doesn’t soak up the flavor. Lame.

I hope everyone is having a fantastic Wednesday! I’m currently studying for my Medical Nutrition Therapy final and make up exam. Yes, I have two exams tomorrow in the time period for one final. I think I can pretty much rock it. Although my make-up exam is on enteral and parenteral feedings + some other lovely junk about the GI system, so it is not the most pleasant topic. Hope ya’lls day is less gross than mine!
