Eggplant Pizza

Hey ya’ll! It is Friday. Wooohooo. This has no meaning to me since I only have class two days a week, which is amazing. It can be a little exhausting because my classes are all in a row on Monday from 3-9, but I can deal with it. Nothing too bad. Plus it allows me to explore the city a bit right now while I still have somewhat of free time apart from reading my books and making notecards. Plus I get to go to Boston next week! I’m so excited. I’m going Thursday-Monday (don’t worry I get back way before class starts)! Today I have an awesome recipe for ya’ll. One of my more recent favorite vegetables has to be eggplant. You can make all kinds of dishes with it. Italian or Asian or really any type of cuisine. I went with a more Italian style of preparation on this dish and made eggplant pizza.

Eggplant Pizza

1 large eggplant
1/2 c of shredded cheese
1 can of diced tomatoes (edit: 2 cans of diced tomatoes)
1 garlic (or only half – depending on how garlicky you want this)
1/2 c of chopped basil
salt
garlic powder
oregano

1. Preheat the oven to 375. First you want to slice your eggplant into 1/2 inch slices (maybe a little more, depending on how thick you want the pieces to be).

2. Place them on paper towels and salt both sides. This is to help make the eggplants “sweat” and get the water to start coming out. While this process is occurring, about 30 minutes, you can start the sauce.

3. Chop up the garlic pieces. Place a small amount of olive oil in a pan and add in the garlic. Start cooking the garlic until you can smell it strongly in the kitchen. Beware, so that you don’t let it brown too much.

4. At this point, you need to start chopping up your basil and getting all of your spices ready.

5. Once the garlic is cooked enough, you want to add in your cans of diced tomatoes. I made the mistake of only adding one can, but you definitely need to have two cans to cover the amount of eggplant you will have. Then you want to add in some basil, oregano, and garlic powder. Stir well. As the sauce may lose some juice, you may need to add a tbsp or 2 of water every now and again. You want to try to smash the diced tomatoes too as the sauce is cooking.

6. Once the 30 minutes has passed for the eggplant, and the sauce is cooked to your liking, you can place the sauce on top of the eggplant slices on a baking sheet. Then proceed to top with cheese and the leftover chopped basil (or you may chop more if you like basil).

7. Then place in the oven to cook for about 25-30 minutes. Just keep an eye on it, so the eggplant doesn’t turn into complete mush and that the cheese doesn’t brown. You want it to just be melted to perfection so it spreads across the eggplant.

I know, I know. It looks like a pile of mush. It is not a very visually appealing dish. It is packed with a ton of flavor though and is definitely worth making. The basil gives it such a nice herby taste. The eggplant is soft, but not too cooked. I hate when it becomes actual mush. That is just not a tasty meal to eat when that happens. The sauce had to many flavors packed into it from the garlic, garlic powder, oregano, and basil. Of course you know the cheese is one of my favorite parts. It melted perfectly, for like the first time ever. SUCCESS. Cheese makes anything ten times better. I made so much of this from one eggplant that I had leftovers for three days. Now that is my kind of dish!

Healthy and delicious. That is definitely my kind of recipe. I have a rule that I only eat out one day a week, which is Saturday for me, so I have been trying to cook all kinds of recipes to keep things creative and so I have delicious things to share with ya’ll on the blog. I am going to have some awesome foodie posts this weekend. I have a dessert recipe planned for tomorrow, I am going out on Saturday to some foodie places, and on Sunday I’m going to this event called Smorgusburg, which is like pure foodie heaven. I’m excited to go wild there. Plus its Yom Kippur starting tonight for all my Jews. I unfortunately won’t be fasting this year, but I believe in always asking for forgiveness for the not so nice things I’ve done this past year. I like that part of the holiday. Starving myself, not so much. Have an awesome weekend ya’ll!

WIAW: Goodbye To Austin

Hey yall! It is that awesome time of the week, What I Ate Wednesday. This awesome day is hosted by the lovely Jenn, who thought of the great idea of sharing drool worthy pictures of what everyone eats every single week. Ummm yes! Best idea ever. This week I am going to do a more sentimental post. I am going to do a goodbye to Austin post in regards to food. For the few weeks before I moved to NYC, I had to stop at all my favorite Austin local foodie places. I didn’t make it to every single place, but that is what vacation is for. I also didn’t take photos at some places and some foodie adventures were epic fails like the time I tried to go to SnoBeach at 8 pm (apparently it is closed at that hour, but who knew). So lets get this foodie party started.

Of course I had to get the holy trinity of hamburgers before I moved away from my meaty state of Texas. Hopdoddy was a must on the list of goodbye Austin foodie places. I ended up getting the turkey burger, which is definitely one of the best turkey burgers I’ve had apart from my own. It is such a juicy burger for being a turkey burger. That is what I love because it is so hard to find a good one that isn’t dry. The cheese that pairs with this burger is perfect. It comes with a light sauce and some vegetables too. Definitely one of my favorite burgers on the menu. If you ever go, it is called the Continental Club! Get it (or every other burger because they are all freaking amazing).

You can’t go to Hopdoddys without getting some fries and green chile queso. At least my mom, my brother, and I can’t go without getting these delicious treats. This green chile queso has the perfect amount of heat with cheesy goodness. Yes when I talk about cheese I tend to make up descriptive words, but I think you get the picture. Fries in queso is probably one of the best combinations that there is. The crispness of the fries goes perfect with the smooth texture of the queso. Then you have the potato to calm down the spice from the green chiles. It is always a win when you order the queso (probably true anywhere in Texas).

Cupcakes are my friend. Ya’ll know that. I bet ya’ll are surprised that I didn’t go to Capital City for my goodbye Austin post, but oh wait I did. I just don’t have a photo of it because I brought a oatmeal cream pie with me on the roadtrip to NYC. I did manage to snap a picture when I went to Hey Cupcake in Austin. This is such a staple for Austin. Almost everyone can recognize the huge pink cupcake sitting a top of any Hey Cupcake store or trailer. I ended up getting the Michael Jackson, which is chocolate cake topped with cream cheese frosting, and the Double Dose, which is chocolate cake with chocolate icing. Oh man. These cupcakes are HUGE. And packed with delicious flavor. The cupcake flavors are so simple, but they are good. The cake is moist, the icing is not too sweet, and there is no lack of icing. It is amazing. That is why people always come back because the product is perfection.

There was definitely a goodbye stop at Chinatown for some dim sum smang session. This was actually my graduation brunch, which we waited until August to have. I know, so weird. It was worth the wait though. I love the BBQ pork buns more than life. They are steamed to perfection. The BBQ is sweet and chopped up in fine pieces, so that you don’t get a bunch caught in your teeth. This was a fantastic meal. My brother kept wanting to eat more and stuffing me to the breaking point. Seriously. At one point he wanted to order like 5 desserts. Ummmm I love sweets, but not that much. He only got 3 desserts instead haha. I am looking forward to experiencing the greatness of NYC dim sum.

Ya’ll better not be surprised that there is a snowcone in this picture. I may have not made it to Sno Beach, but I did make it to Casey’s New Orleans snowcones. I ended up getting a blackberry snowcone with condensed milk on top of it. It was pretty delicious. The blackberry syrup actually tasted like fresh blackberries, which is pretty impressive for a sugary syrup. I like this place because the syrups are very quality. You know that you will always get a top of the line when you go here.

Lobster rolls in Texas! Such an odd goodbye. Since I’m going to a city with more access to lobster and lobster rolls. Dock and Roll is such an amazing place in Austin though. I had to say goodbye. Who thinks of putting bacon fried chicken on top of a lobster roll? Only these guys. If every place had creative lobster rolls I would be the happiest girl on Earth. This lobster roll definitely made my day. It was really hot outside, so that may have been the only downside. The lobster was extremely fresh and there were huge chunks of it in the roll.

For my goodbye lunch with my grandparents, they took me to one of my favorite restaurants. The Roaring Fork. This place is so good. I ended up getting this green chile pork carnitas. Oh my god. It was so spicy. I thought I was going to die. It was delicious though. Totally worth sweating in a restaurant for (okay – I didn’t actually sweat, but it was pretty hot). Luckily they had the air conditioner on hard core. The crunch of the corn tortilla was perfect with the soft texture of the pork. The pork was amazing. It just fell apart in your mouth. It was topped with loads and loads of cheese too, so you know it had to be good.

SUSHI SUSHI SUSHI! Couldn’t leave without saying goodbye to one of my favorite sushi places in Austin: Tomo. Seriously perfection on a plate. Japanese lasagna, ex-girlfriend, double D, say my name. Ummm yes those are the names of the rolls and that makes me happy. Where can you go to have delicious sushi with hilarious names? Only in Austin. We like to keep things weird, real weird. Maybe Workaholics should move to Austin since they are always wanting to get weird. Ha. Such a lame joke. Yeah I’m pretty lame, but I eat good food.

Austin is like the mecca of taco heaven. There are so many great options of places to eat tacos at, but one of my favorites is Torchy’s Tacos. There is one literally down the street from my house, which is AMAZING. There are trailers sporadically throughout the city and actual storefronts like the one in my neighborhood. I have the Baja Shrimp Taco and the special taco of the month, which was fried chicken on top of a waffle on top of a fried egg with bacon on the top and drizzled with maple syrup. UMMM YESSSS. Maybe the greatest thing that I have ever eaten. You need to go here at least once a month to see the different taco of the month because they can get pretty crazy and are always delicious. The best part is you can always order your taco on corn or tortilla. I think some tacos go great with corn like the fish tacos, but the ones with fried chicken need to be on flour. Who cares if it is super unhealthy? It is tasty.

Well that is all folks! I hope everyone had a happy WIAW and technically it is Thursday, but that is because I had to deal with TWC for about 2 hours yesterday, so I couldn’t finish my post before class then when I got out of class I had a friend come over. Woo. It was a crazy Wednesday, but I survived.

Sushi Time!

Hey ya’ll! I survived my first day of full class. I have class from 3-9 pretty much with small breaks in between each class. By the end of the day, I had a headache. I think it was because I didn’t eat enough, but my last class of the day is sort of boring. It is a research methods class, which I find that I don’t need since I can read research, I’ve worked in a research lab, and I wrote a review paper to be published. Hmmmm. Can I just not take it pretty please? I’ll suck it up and survive though. The professor is at least this hilarious older guy who lived in Austin for 8 years, so hook em! On to the fooood. This weekend, Carrianne and I went to have dinner with a friend of ours from BU over in Brooklyn where he lives. Let me tell you something about Brooklyn. It has delicious food, but OMG it is so far away on the train from where we live. Not to mention the fact that the L just sits at 8th ave FOREVER! Lets distract my anger towards the train by thinking about my favorite food: SUSHI!

We ended up going to this really cute place in Williamsburg called 1 or 8. At first we couldn’t figure out where it was because the sign on the door was incredibly tiny. We weren’t sure if it was the place or not until I eventually saw it say 1 or 8 on the wall. When we walked in the hostess asked if we had a reservation, which we said no to and then she went away for a few minutes. At first we were a bit like what? Since there was not many people there at the time we went. However she came back with menus and took us into this really cute room with branches all along the wall. It definitely had an awesome atmosphere.

The menus were the cutest things. Each menu was on a clipboard. The main menu had about 4-5 pages. The drink menu came on a super tiny and adorable clipboard. It was just a super fun place to be. It was definitely a hip spot because there were huge groups of people. I was excited as I flipped through the menu looking at all the possibilities. I did think it was super hilarious that they had fish and chips or croquettes on the menu. It was like a Japanese fusion type of restaurant.

So pretty much all of my photos are going to be dark because the restaurant decided to have some romantic lighting by candlelight only. Therefore I think only about one of my photos turned out perfect.  We started out with some edamame because all three of us were starving. We were popping these things into our mouths like crazy. We went through this bowl pretty fast, but by the time we were done our food was there. Our friend Jason ended up getting Miso soup with his meal. He let me have a bite and it was delicious. The tofu in it was made fresh at the restaurant.

My dark plate of sushi. Oh how I love thee. You were so delicious and tasty. The roll in the front was called a salmon mozzarella roll. It had salmon, mozzarella, semi-dried tomato, and yuzu tobiko. It came along with a basil dipping sauce. Wow this roll was delicious. At first I was skeptical because Carrianne said she had a bad experience with a cheese roll, but I thought why not go for it anyways? It was a good decision. It tasted a bit like bacon rolled in mozzarella cheese. In my mind it was Italian style sushi. My other roll was yellowtail mango. I love mango, so that is really the only reason I decided to get this roll. The roll obviously had yellowtail and mango, but it contained jalapenos too. It came along with a cilantro sauce, which was to die for. The roll was fruity and fresh. The quality of the fish was high, which made the place so appealing. I always hate when the fish isn’t up to par.

Here is Carrianne’s dark plate of sushi. She ended up getting a salmon skin roll and a few pieces of nigiri. She enjoyed all of her sushi and said the fish was so delicious.

Why did Jason’s plate of sushi come out in a normal color? I will never understand this. He ended up getting one of the sushi plates. It came with around 7 pieces of different types of nigiri and one sushi roll. His sushi roll was huge. It was stuffed with tuna, squash, and a wide assortment of other vegetables. He really seemed to like it. I don’t understand how people fit those huge pieces into their mouths and eat it like a normal person. I swear I look so uncivilized when I’m eating large pieces of sushi.

I saw this when we were walking to 1 or 8 and thought it was cute. I think I only like it because it says Jewish, but it was also neat that they had a bunch of street art around the city. Ya’ll know how much I love street art. Anyways 1 or 8 is definitely a good place to go for sushi. It is worth the trek out to Brooklyn if you don’t already live there. The prices are extremely decent. Averages from 10-13$ for a fancy/crazy roll while simple rolls are 4.50-6.50.

Cauliflower Fried Rice

Hey ya’ll! Hope everyone is having a good Monday instead of having a bad case of the Mondays. I love Monday because I don’t have class until 3 in the afternoon, so I can wake up around 8 am and get all the things I need to do done for the day before class. It is a nice schedule. In more delicious things, I have another yummy recipe to share with ya’ll. This one uses one of my favorite vegetables: cauliflower. Ya’ll know how much cauliflower I eat from my Cauliflower Pizza Crust recipe. I could just eat those things forever (I have basil in my fridge right now just so I can make some pizzas). But back to this new recipe. It contains a few of my favorite things: Asian food, pineapple, and cauliflower. Hmmmm what could that be? CAULIFLOWER FRIED RICE!

Cauliflower Fried Rice

2-3 cups of finely grated cooked cauliflower (I used a food processor to chop it up)
3 tbsp of soy sauce
1/2 c of egg white liquids
1/2 c of chopped onion
1/3 c of chopped garlic
1 c of vegetables/mix ins (pineapple, peas, carrots, broccoli, etc)

1. Chop up onion until fine pieces. Place into a pan sprayed with cooking spray and heat until the onions become see through.

2. Add in your mix-ins, such as broccoli, peas, carrots, pineapple, tofu, etc. Cook until you can see the vegetables are cooked and have lost all traces of frozen marks.

3. While the vegetables are cooking in a pan, place your cooked cauliflower into a food processor to chop. Mix it in until it appears to look like a rice texture.

4. Also in a small pan, cook the liquid egg whites until you have a pan filled with scrambled eggs.

5. Toss in the scrambled eggs, chopped cauliflower, and 3 tbsp of soy sauce until all is throughout mixed.

6. Once everything has cooked through for 3-4 minutes, you are ready to enjoy. This dish makes about 2-3 servings depending on how much extras you add in.

This dish is seriously delicious. You are getting a ton of nutrients while consuming a tasty meal. Fried rice can be full of calories for a variety of reasons. This fried rice is a much better and healthier option for you, especially for those of you that don’t get enough vegetables throughout the day! Cauliflower is such a good base to use in a variety of recipes. Cauliflower can be considered an antioxidant due to it containing Vitamin C and manganese. These help lower the levels of oxidative stress, which is extremely important in regards to a wide spectrum of health problems. Cauliflower also contains Vitamin K, which helps play a role in anti-inflammatory (good for me since I always need to decrease my inflammation)! Also cauliflower aids in digestive and cardiovascular health. It contains around 12 g of fiber for ever 100 calories of cauliflower. Wow! That is awesome. Plus you are getting fiber and other beneficial nutrients from whatever you add in.

I ended up topping mine with some sriracha because I needed that little extra kick with my meal. With my leftovers, I’m going to add in some tofu to give it some protein. I think that will be perfect along with some more sriracha sauce. I’m bringing this to class for dinner. People will probably stare at me, but not like I care. I’m always eating in class. I bring the loudest snacks ever to class like carrots and apples. It is always super awkward when it gets quiet and I’m like chomping away on things. Anyways I hope ya’ll enjoyed this! I definitely recommend going out and making this immediately!!

Sweet Potato Nachos

Hey ya’ll! I have a delicious recipe in store for you. Now that I live in New York City, I’m pretty far away from my delicious Mexican food (although I live in a Dominican neighborhood, so I’m at least getting some Spanish food in my life). I decided that I wanted to make something Mexican inspired in honor of my home. However Mexican food is full of fat, calories, and food items that are not so healthy for you. That gave me the idea to “healthify” one of my favorite dishes: Nachos! I could have made tortilla chips from baking corn tortillas, but that is the easy way out. I ended up making my base or chips from baked sweet potatoes.

Sweet Potato Nachos

2 small sweet potatoes
1-2 tsp of olive oil
1 pinch of garlic powder
any other spices or seasonings you want to add
Cheese of choice (I used fat free Mexican Blend)

Topping ideas:

Cilantro
Tomatoes
Jalapenos
Onions
Black Beans
Banana Peppers
Chives
Chicken/Beef

1. Preheat oven to 350. Wash your sweet potatoes and peel them until there is no skin left.

2. Then slice both potatoes in thin round slices.

3. Place in a small container, pour in olive oil, and mix well.

4. Place slices on a baking sheet and sprinkle with garlic powder. If you have added other spices, sprinkle them on at this point.

5. Place in the oven and bake for 35 minutes.

6. Take it out of the oven, but leave the oven on. Then sprinkle on cheese. Depending on personal preference you can either add on the rest of the toppings now or wait until all the cheese is melted. Personally I put the toppings on then put the cheese on top because it made the toppings cheesier (ya’ll know I love cheese). Then place in the oven to monitor until the cheese is melted.

7. Enjoy!

This was the perfect dish. I wish I would have had more things to place on as toppings, but I had forgotten things such as avocado at the supermarket. Next time I will definitely be having black beans and avocado on top of my nachos. It would have been creamy and delicious. Plus including more protein would help you stay fuller. I added Greek yogurt on top of mine instead of sour cream. It was a much better option that putting sour cream on it. Sweet potatoes are a much better option than regular tortilla chips for a variety of reasons. Sweet potatoes are extremely high in vitamin B6, which helps reduce homocysteine in our bodies. Homocysteine has been connected to a variety of diseases and has even shown a role in heart attacks, so eating more sweet potatoes is definitely a good move for those that are heart health conscious. Other nutrients that sweet potatoes contain are Vitamin C, Vitamin D, iron, magnesium, and potassium. While that is a long list, one of the most important and well known compounds that sweet potatoes contain is carotenoids. More specifically, sweet potatoes are packed with beta-carotene, which helps with eye function and to boost our immune systems. Besides the many health benefits of sweet potatoes, they are extremely versatile to cook with. Just look at my recipe! You can make sweet potato chips. How awesome is that?!

I just look at these and it makes my mouth salivate. Thank god I bought 2 lbs of sweet potatoes at Trader Joe’s! But actually I wont be making these anytime soon because I have a ton of different sweet potato recipes for ya’ll coming up sometime soon. I hope everyone had an awesome Sunday! Mine has been extra special since the University of Texas Longhorns won against no. 2 Stanford today in volleyball (not to mention that they also beat number 1 Penn State the day before). Hook em! Ya’ll know how much I love my volleyball. It has been hard not being able to go to the games, especially since they were extremely exciting this weekend. My mom and brother went, so at least they were sending me the scores, videos, and hilarious quotes from the crazy people in the audience!

Concrete Jungle and Snowcones

Hey ya’ll! Sorry I haven’t been around lately, but I have been on a whirlwind of events. I ended up deciding to go to graduate school at Columbia University in THE New York City. Best decision of my life. I have recently moved up here (recently being this past weekend, I drove all the way from Texas – woooo). I’m now living with my best friend from BU and another girl that went to BU. We all three go to Columbia, but I’m the only one that studies nutrition. I love my program! It is so amazing and I will definitely go on and on and on about it, but right now I’m going to share my first NYC adventure with ya’ll!

My roommate, Carrianne, and I ended up going to Greenwich Village to go on a hunt for something we needed for the apartment. However we ended up at this really cute pet store that had a ton of puppies on sale. Of course we had to go in and look at all of them just for fun. We definitely will never be getting a dog up here, but it doesn’t hurt to look at them. This cock-a-poo was so cute. I was tapping the glass with my finger and she was chasing it around. You could tell she did not want to be in the container. I wish we could have taken her out for a walk. I have a weak spot for adorable little puppies. After we had our fun, we went on the real adventure: to get a snowcone (ya’ll shouldn’t even be surprised at this point).

Ya’ll know how I love snowcones, especially New Orleans style. This place was so cute. It was called Imperial Woodpecker Snow-balls. It was tucked away in a street filled with restaurants. It was sort of like a food stand just out on the street. The guy was sitting there with the ice machine in front of him and all the bottles of flavors. This was the huge menu of flavors! It was so hard to pick what I wanted. I am definitely going to have to venture back to Greenwich just to have one of these snowcones before the September 15th close date.

I eventually decided to go for a booze theme and get flavors that were named after drinks. I chose margarita and mojito. I loved that the snowcone came in a takeout container. It was massive and definitely worth the 5$ price. It was sweet and tangy. The flavors matched each other perfectly as did the color. It was just a visually appealing snowcone with phenomenal flavors. I was in heaven as we walked around Greenwich looking at shop windows. I wish it was a never ending snowcone.

Just look at the majestic power of this container of shaved ice! It is seriously delicious. There are not enough words to describe the flavor sensation I experienced as I bite into this. The flavors were less fake and syrupy. It tasted as if they had made the syrups themselves instead of ordered them from a standard shaved ice company. They actually even had all natural flavors such as jalapeno watermelon and Meyer-Lemon Basil. Ummm yes. Who doesn’t want exotic flavors like that on a cup of ice?

Imperial Woodpecker Sno-Balls is the place to go! If you are in NYC currently, make it down to Greenwich village by Sept 15th to enjoy this tasty treat. The sad thing is that the manager is moving out of NYC, so this will be the last summer with Imperial Woodpecker Sno-Balls. I know, right? I discover something delicious in the city, and it is already leaving me! Oh well, I am going to make one more trek out there in order to try another flavor. Carrianne ended up getting the King Cake flavor and said that it was quite delicious!

Later that night, we were originally going to go out, so we went to this tapas bar, Marcha, in our neighborhood before going out. We ended up getting a couple of cocktails and tapas. Turns out that we didn’t make it out, but we didn’t really care because this place was amazing. The music was great, the cocktails were even better, and the food was so good. I ordered a colada type of drink that had hints of pineapple, coconut, and mango in it. It was like drinking pure fruit with alcohol hidden throughout it. Carrianne got a strawberry drink with champagne and some other alcohol in it. It was delicious, of course.

We got an order of patatas bravas. I know this doesn’t look like all the pictures of my patatas bravas from Spain, but this dish was equally delicious. It had a spicy aioli drizzled across perfectly seasoned and cooked sliced potatoes. We inhaled these. The sauce was so creamy and rich. The spiciness was not overpowering either, which was amazing. We also ended up order croquetas, specifically ones with goat cheese, tomatoes, and a red wine dipping sauce. Holy heck! These things were amazing. I wish I would have taken a picture, but at this point we were on our second cocktails and feeling good. I’m so glad that this place is one block from my apartment. We decided last night that this will definitely be one of our neighborhood joints.

I’m so glad to be living in the wonderful city that is New York. Ya’ll we be joining me on my foodie adventures to test out restaurants and cook in my apartment. I am going to be making a ton of different recipes, recreating dishes that I try, doing epic restaurant reviews, and of course sharing nutrition tidbits from my classes and life.
