Belated Birthday

Hey ya’ll! This week is sort of crazy for me. I’m taking the GRE on Thursday night, so I’ve been devoting my life to studying for it. I am praying that I do good, so I don’t have to take it again. That thing is freaking expensive. To be honest, I don’t really think you need to be skilled in geometry or have a high vocab to get your masters in nutrition and exercise physiology. Anyways this past weekend it was my mom’s birthday! I seriously love my mom to death, she is pretty awesome.

Funny story actually. So on Friday we went to this place called Hey Cupcake to get my cousin a few cupcakes for her birthday (yeah, all of my relatives are born at the same time – weird), and my mom decided to get one for herself for her birthday. The guy working there was like well how old are you and she was like guess how old my daughter is, so he looks at me and goes 16. REALLY DUDE? Like really? I’m 23, but sure 7 years off isn’t bad. He then proceeds to flirt with me and talk about how tall women are beautiful. Umm okay, you just thought I was 16 about 5 seconds ago.

DSCN0160For my mom’s actual birthday, we ended up going to the Whole Foods in downtown Austin to pick up lunch and about 5 million desserts. Okay, I exaggerated a bit. Only like 6 desserts because there was a surprise waiting for my mom at home. We first went to go get my mom a chocolate covered caramel apple at the chocolate bar in the Whole Foods, and that is where I saw some pretty cool stained glass chocolate. I love that chocolate is an art form. I also love the way it tastes. You are probably a deeply disturbed person if you don’t like chocolate.

DSCN0167For my lunch I had a salad from the hot and cold food bars. I piled it on with delicious goodness. It had spinach leaves and romaine lettuce, eggplant with miso glaze, roasted zucchini, grilled mushrooms, pesto roasted tofu, edamame, and some roasted tomatoes. Healthy and delicious. That is my style. My brother and mom split a sandwich called the Mopac. I know ya’ll are telling me to shut up about the food and just get to the desserts, so lets do this.

DSCN0171That is beautiful. I have a weakness for cherries. Oh and if you didn’t already know chocolate too. I love chocolate. This was a black forest cake in a cup. I love when Whole Foods smashes up a dessert and puts it in a cup to go. This dessert was probably my favorite of all the ones we picked out to have. It was so rich from the chocolate and it was moist. Thank god because I hate when cakes or brownies are like crispy instead of squishy.

DSCN0170That cloud of fluffy icing looks like a nice pillow that I just want to lay on and eat it up. Maybe not exactly, but I definitely want to gobble it up. This is the tres leches cake at Whole Foods. If you haven’t had it, you seriously need to get in your car and go pick one up immediately. This is probably the moistest cake I have ever had, and also the best tres leches cake I’ve probably had too. Whole Foods does a perfect job of incorporating the classic flavors of this traditional Mexican dessert.

DSCN0163The surprise that was awaiting my mother. A Banana Fosters birthday cake. Yes, I know. This actually exists in reality. Thank you Whole Foods for being the greatest place in the world. Okay I wouldn’t go that far, but I do love the Whole Foods. Really just the one in Austin because it is the headquarters and far superior to any other one in the world.

DSCN0169This cake was heaven. It had a thin layer of caramel for every icing layer within the cake. The bottom of the cake was surrounded in dehydrated bananas, I was a fan and no one else was. The icing was fluffy and delicious, while the cake was not dry and had so many flavors packed into it. It was sort of overwhelming, but in a good way.

DSCN0173I ended up having some fruit salad, so I could pretend that I didn’t eat all of that dessert. I’m not that much of a fatty. I only had one or two bites of every dessert that we actually got. I liked the fruit salad though. It was only filled berries and pineapple. I was glad because I’m not a fan of honeydew and I hate when people put it in fruit salad. Gross.

DSCN0161I just thought this was really neat. We obviously didn’t buy a huge thing of chocolate, but I love how they do all these cool artsy pieces in the display case at the chocolate bar in the Whole Foods. I do wonder if someone actually buys these things. I wouldn’t mind if a guy bought me that key in dark chocolate.

DSCN0162We know I love cupcakes. My weakness in life. Whole Foods does such a good job at making the cupcakes look crazy adorable, so people will buy them. This one was my favorite one that day. It was an icecream sunday on top of a plain vanilla cupcake. I’ve had their cupcakes before, so I didn’t want to get one. I love the icing, but the cake is just sort of a cake. Whole Foods is obviously somewhere you don’t go to get the cupcakes, but still most of their desserts are pretty mind blowing.

Another two-fer

Hey ya’ll! It is Thursday. So excited that it is almost the weekend. I am literally exhausted from doing crafts and finally unpacking my apartment – I know, I moved like two weeks ago. I’m just really lazy. I have a doctors appointment today (hopefully I’m not slowly dying), and I have volleyball practice tonight.

Aren’t these girls sooo cute? They are my JCC Maccabi Team Austin volleyball team – it is a Jewish thing. It is sort of like the Olympics for Jewish teens from 13-16. Every year, a city hosts it and hundreds of Jewish teens come in to compete in different sports. This year Houston is hosting, so it will be huge. I’m excited. Especially because when I played I was a gold medalist.

Anyways, I’ve been doing slave labor and hand painting t-shirts for them. The girls gave me the money, told me to get hot pink, and I came up with the design. This is the front, and the back will have their last names and a cute volleyball quote. Everyone is going to be jealous, and I won’t be able to stand up from hunching over to paint them. I’ve only been able to do 5 so far because painting the fire is time consuming. Hopefully I’ll finish soon.

Baked Apple Oats
1/2 c Oats
1 1/2 c water
1/4 tsp vanilla
1 packet truvia
1 melted banana
1 sliced apple
1 tsp chopped walnuts
2 tbsp raisins
1 tsp brown sugar

1. Add oats and water into a microwavable safe container, and heat for 2 min and 55 seconds.
2. In a second container, add the slice apple, sprinkle with a pinch of brown sugar, and cover with plastic.
3. Heat in the microwave for 2 minutes.
4. While apples are cooking, add vanilla, truvia, and brown sugar into oatmeal.
5. Then add melted banana (previously done in microwave for 1 min and 25 seconds).
6. Then add in apple mixture (make sure to slice down to even smaller pieces).
7. Add in raisins and walnuts.

Enjoy. This recipe reminds me of fall because of the sweetness of the apples. I could probably eat more than one apple a day because I love them so much. However, this definitely doesn’t keep the doctor away.

Black Forest Oatmeal Parfait (I know I promised this recipe a while ago)

1/2 c of Oatmeal
1 1/2 c of water
1/4 c of fat free cottage cheese
1/4 tsp vanilla
1 packet of truvia
1 packet of 20 calorie hot cocoa
chocolate chips
1 c of sliced cherries

1. Microwave oatmeal and water in a safe container for about 2 min and 55 seconds.
2. Mix in vanilla, truvia, chocolate, and cherries.
3. Spoon one layer of oatmeal mixture in a cup.
4. Top with a layer of cottage cheese.
5. Then another layer of oatmeal followed by cottage cheese until you run out of oatmeal or get to the top of the cup.
5. Top with a few chocolate chips and some more cherries.

This is definitely an amazing breakfast. I love parfaits – mainly because of TCBY, but this one is pretty good.

These girls are seriously too cute. There was a big storm at the last practice, so they wanted to go out and play in the rain for a little bit. Being the cool coach that I am, I decided sure. They are so funny. I don’t know what I would do without these girls!

WIAW #4: The Breakfast Club

Hey ya’ll! It is that awesome time of the week: What I ate Wednesday. Shout out to Jenn for hosting such an awesome blog link up party online. While everyone else is having epic Wednesdays, I’m sitting around my apartment all day waiting for the energy company to come hook up the gas. Yeah, no fun. Luckily I have my computer, books, and my roommate’s cat to keep me entertained. Let’s get to the good stuff. Today I’m doing a post all about breakfast. Seeing as it is my favorite meal of the day, I thought it was appropriate. However, I’m also going to give you a little nutrition lesson too.

Black Forest Oats Parfait

Breakfast is probably the most important meal of the day because it gives you a healthy start to the day. Most people think that by skipping breakfast, they will be able to lose more weight. However this is actually a myth. Eating breakfast actually increases your metabolism, which in turn helps you lose weight quicker. Also, if you don’t eat breakfast by the time lunch rolls around you are hungrier and therefore more inclined to eat more food than you would have. This leads to more weight gain. Obviously the key point here is to eat breakfast, but there are also many other benefits that can be connected to eating breakfast.

Studies have shown that breakfast has a huge impact on cognitive function. Most studies have been done on school aged children showing that by eating breakfast they perform better on tests and in school. However this information can be used for adults too since our brains need fuel to function properly. Breakfast is also connected to concentration. Studies have shown that people who eat breakfast have an easier time focusing on the task at hand compared to those that do not consume a morning meal.

S’mores Oats

Another reason that breakfast is an important meal of the day is because of energy. By eating breakfast, we are supplying our bodies with nutrients and substance. From this, our body gets energy. When you sleep at night, the body goes through seven to eight hours without eating, so it is important to eat breakfast. Otherwise you will lack the energy needed to get through the day. No one wants bad grades or to get fired, so EAT Breakfast.

Pistachio Pancakes

A healthy breakfast doesn’t have to take long to make or be super fancy. All you need is plenty of fiber and a healthy source of protein. These are things that help you stay satisfied for a long period of time, provide a good amount of energy, and keep your metabolism going. For fiber, one can consume whole grains, fruits, and vegetables. For protein, there can be a variety of sources based on the diet. Obviously you can have meat, but other choices include beans (for vegans and vegetarians), eggs, cottage cheese, greek yogurt, or tofu (I saw a great recipe at Jenn’s for Tofu french toast – definitely going to try it out soon).

The lesson is you need to eat breakfast. I find that breakfast is fun. Don’t worry. I will share all of these recipes pretty soon! I wouldn’t show you pictures without telling you how to make it. I hope everyone has an awesome Wednesday. I’m just hoping that the energy guy comes soon, so I can finish unpacking and doing stuff that I need to do.

WIAW #3 – The Party of The Year

Hey ya’ll! Happy Independence day and WIAW! While most of you will be eating, drinking, shooting off fireworks, I’ll be finishing my move and starting my research paper that is due on Friday – uh oh. Yes, I probably shouldn’t have left that till last minute, but I think that some of my greatest work comes from that sort of pressure – like that time I wrote a ten page single space paper on green tea. Oh yeah good times. Anyways lets get to the fun part of today, What I ate Wednesday hosted by Jenn.

I had pumpkin pie pancakes. These were delicious. I was wondering what kind of pancakes I should make as I was looking through my fridge. I then saw some canned pumpkin that I had leftover from my pumpkin pie cheesecake oats (recipe will come soon). I was like oooo that would be delicious in pancakes, so I went with it. It turned out pretty amazing if I do say so myself.

Pumpkin Pie Pancakes
1/2 c Whole Wheat Flour
1/3 c Almond Milk
1/3 c. Canned Pumpkin
1/2 tsp vanilla extract
1/8 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
1 packet of stevia
1 tsp of cinnamon (add as much as you like)
1/2 tsp of pumpkin pie spice

1. Mix all of the dry ingredients into a bowl.
2. Add in all wet ingredients and mix well.
3. Place on preheated pan using a 1/3 c to scoop out batter.
4. Heat until bubbles appear and flip over.
5. Cook until lightly brown.
6. Top with whatever you would like – I put banana slices, chocolate chips (gf/df), and sugar free syrup on top.

These were yummy in the morning, and I had so much batter that I ended up making extra to eat again. Success!

These are my typical class snacks. I get a bag of red cherry tomatoes and yellow grape tomatoes. I have a bag of cherries, blueberries, and blackberries. Then I have a piece of fruit on the side like a peach, pear, or apple. This day it was a peach. I like to mix that up. Also I tend to throw in a kashi granola bar, but since I’m in the moving process right now finding all my food is hard.

For lunch I had sushi. When I was in Austin this past weekend, I ended up going to How Do You Roll to get my brother some food and when I was there I got a free roll on their new card system. I ended up saving mine since I was going to have lunch with my dad. I decided to cash it in yesterday. I got a roll with brown rice, tofu skin, avocado, cucumber, and topped with spicy mayo. Oh man tofu skin. It is amazing. I am now getting it in pretty much every roll there. It is sweet tasting. Not what you would expect. I also got a free thing of edamame with my roll. It was awesome.

After lunch lately, I’ve been enjoying smoothies to keep me cool in the hot weather. This one is a Chocolate Blueberry Smoothie. It just has chocolate powder, water, tons of blueberries, and ice. It makes a pretty large smoothie, which is awesome.

For another snack, I munched on some Chobani. It was Blood Orange. I seriously love this flavor because it is so tart and sweet. It probably is one of my top three flavors. This is a great snack to have because it contains a high amount of protein and is very filling. A good idea for those vegetarians out there needing to get protein without eating meat.

Brinner. Breakfast for Dinner. That is my kind of meal. I had an omelet with onions and mushrooms topped with salsa. A bagel thin with cinnamon laughing cow cream cheese and banana slices. A grapefruit. This was definitely the way to go. I was pretty satisfied and pretty full after this meal for a queen. Breakfast is my favorite meal of the day, so if I could eat it all the time I definitely would.

I wanted to try an omelet with cheese to see what it would be like. It was actually pretty great. Plus I discovered salsa on top of eggs. Mmmm. So good. I’m definitely going to be doing this for a while now. I like to switch it up every once in a while.

My fitness is moving boxes all day, but I don’t have any photos of that. I will definitely take some of my new place – more specifically MY CLOSET!

A Two for One Special

Hey ya’ll! I’m so thankful that the week is almost over because that means that I’ll be moving and I only have one week of summer school left. So happy that I’ve survived. Anyways for today I thought I would give you a two-for-one special, which means that I’ll be posting two recipes on one post. I thought I would share the love today plus I just “love two-fers”. Both of these recipes are on Your Healing Diet plan because they are grain only recipes with fruits added in!

Black Forest Pancakes
1/2 c. Whole Wheat Flour
1/3 c. Unsweetened Almond Milk
3 tbsp of egg white substitutes
1/4 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/4 tsp vanilla extract
1 packet of stevia
handful of chopped cherries
1 packet of 20 calorie hot chocolate
handful of chocolate chips (go crazy if you want)

1. Mix all of the dry ingredients in one bowl (this includes the cocoa mix).
2. Add in all the wet ingredients, the handful of chopped cherries, and the chocolate chips.
3. Using a 1/3 c. pour out batter onto pre-heated pan.
4. Wait until bubbles arise in the batter and the edges puff up, then flip pancakes to other side.
5. Remove from pan once lightly browned.
6. Stack pancakes then top with more chopped cherries and a drizzle of dark chocolate.

These are ridiculously good. I’m not even kidding. I love all things cherry related because cherries are my favorite fruit, but combined with chocolate it is like one awesome sweet kick to the mouth. I was pretty depressed after I devoured this entire plate in like 30 minutes – that is something I need to work on, eating slower. Oh well, I just enjoy food in my mouth.

So for my next recipe, I’ve been telling ya’ll that I would post it, so finally I’m posting an oat recipe. I know ya’ll are probably shocked I haven’t posted one since all I used to talk about what oatmeal and all I eat mainly is oatmeal. Well here it goes:

Apple Pie Cheesecake Oats
1/2 c. old fashioned oats
1 c. water
1/2 c. unsweetened almond milk
1 packet of stevia
1/2 tsp vanilla extract
a pinch of cinnamon
1/4 c. fat free cottage cheese
1 microwaved banana
1/3 c. sugar free apple pie filling

1. Place oats, water, and milk into a microwavable safe container, and heat for 2 minutes and 55 seconds.
2. Pour cooked outs into a bowl, add stevia, vanilla, cinnamon, cottage cheese.
3. While doing step 2, place sliced banana into microwave and heat for 1 min and 30 seconds.
4. Mix in “melted” banana into oatmeal.
5. Heat up the apple pie filling for about 2 minutes.
6. Add hot apple pie filling to oats.

One lesson I learned about this bowl of oatmeal is that you should cut up the apples after you cooked them that way there are more chunks in the bowl. Plus eating scalding hot apple slices is not so pleasant on the mouth at like 7 am. This bowl of oats will definitely help you get through a long time of the day because the grains are very filling and the cottage cheese provides a small amount of protein!

I’m preparing for a crazy week. In about an hour and a half I have an accounting exam on taxes that I have to take online. The good thing is I only need 30 more points to get an A in the class, which will be easy because I have this exam and an assignment left to do! Three cheers for not having to take a final. Also I’m super pumped about moving, but it will be some work. My apartment is sort of a disaster right now. Meh. Nothing I can really do about it until I move. WIAW #2 The Snack Attack

Hey ya’ll! It is halfway through the week, which means it is almost over and today marks What I ate Wednesday. Thanks to Jenn for hosting this fantastic day. I really don’t know what I would do in the mornings without having a bunch of food pictures to stare at while I ate my breakfast before classes. WIAW always makes my day so much better. For breakfast, since I woke up at my mom’s place, I decided to have an omelet. Doesn’t that cheese look so oozy and good? It was a pretty plain omelet since she was lacking a lot of vegetables in the fridge, but that didn’t bother me. It was just egg white substitutes, onions, and a 1/3 cup of cheese. The cheese to me is what makes the omelet the best.

For one of my mid-day snacks, I decided on a Kim’s Magic Pop. These can be found in the most obscure places, but I recommend that you go get them immediately. They are a low cal snack, about 10-15 calories, that come in a bunch of flavors. They have strawberry, cinnamon, plain, and onion. I have the strawberry and I topped it with laughing cow strawberry cream cheese and banana slices. It is the perfect snack to tie you over.

For lunch I had a snowcone. Yes not the healthiest choice, but it was about 106 degrees outside and I needed a cold treat. This is from Sweet Caroline’s, which is down the street from my mom’s place. I got the Hulk, which is grape, green apple, and pineapple with nerds in it. It was delicious and hit the spot. I’ll actually be doing a review of New Orleans style snowcones pretty soon!

Cherries are probably my favorite snack. They are so tasty during the summer. The only problem is that they are so freaking expensive. Give us our cherries, but at a discount pretty please. I mainly buy them at CostCo (well my dad does) or I get them on sale at the grocery store. I really wish the other type of cherries would go on sale because I love the white ones.

Man I was totally being a snack monster. It was so hot that I needed to make myself an ice cold smoothie. It was my Very Berry Chocolate Smoothie, which I’ll share the recipe soon because today is just all about pictures and sharing our meals. It really hit the spot and it was also massive. It filled up my longhorn cup. I got to use a straw too, which always makes me happy (You can laugh at me now because I am five years old and love straws – I have a massive bag in my pantry).

Mmmm just look at it, so tasty. If I didn’t have a straw, I probably would have eaten it with a spoon, which is my second favorite way of eating a smoothie or shake.

For dinner, I had a chicken burger topped with jalapeno cheese and caramelized onions and mushrooms. This is probably one of my favorite meals. Mainly because I just love caramelized onions and mushrooms, but also because the spiciness of the cheese gives this meal a little kick. Right now I’m trying to eat all of my meat products, like these burgers, in order to clean out everything but fish products so I can go pescatarian.

The most delicious snack in the entire world. And my brothers wonder why I’m a snack monster? Well when you eat stuff like this obviously you love snacks. This is greek yogurt with sugar free fat free butterscotch pudding powder. Then I add in sliced strawberries and a couple of gluten free chocolate chips. This is the bomb. I usually love to mix up the pudding flavors every week like to lemon or pistachio or chocolate. Everyone should have this as their bedtime snack!
