Doughnut Plant

Hey ya’ll! Hope everyone is having a relaxing Sunday. I am dying actual death. I ended up going out last night for my birthday, it was a good time, but I am so tired. Then I went to Chinatown for brunch today with my two girls! It was insane down there. Too many people. I do love my dim sum though. As ya’ll know Saturday is my treat day, so last Saturday I ended up getting myself a treat that I have been craving for years. Ever since I saw Doughnut Plant on Best Thing I Ever Ate on Food Network, I knew I had to go to this place. Finally this past Saturday I made my way to the doughnut heaven!

Enter doughnut plant. It was as if it was fate that we had met that day. By chance there was a doughnut plant right by the place we were going to earlier that day. I told Carrianne that no matter what happened, I had to stop in so I could get something to go. It was literally one block over from where we were. Unfortunately since we went so late in the day, there was a lot of stock sold out, but there were still some really delicious doughnuts left on the shelves.

This place is so cute. There is a wall of doughnut pillows. I really wanted to rip one off the wall and steal it You know which one. That pink sparkly one Maybe the peach one too. I love doughnuts and I love squishy pillows on my bed. The atmosphere is really fun in doughnut plant. The staff is super friendly and trendy, which makes the shop really great. The store is organized really great too. There is ropes with a line, so no one can cut you. I hate people that cut! So annoying!

This is the creme brulee doughnut. It is kind of small, but packed with a ton of flavor. It is definitely worth the money. Inside is the pudding like cream that you would normally find in a creme brulee. The doughnut is then torched and it has a layer of hard caramel on the top. It was so amazing. Every bite was like tasting heaven. I was kind of sad that it was so small because I never wanted it to end The crunch of the outside went nice with the inside smooth texture. The flavors mixed well too.

This is the carrot cake doughnut, which I am totally in love with. There was cream cheese in the inside of the doughnut, which was AMAZING. I love that about carrot cake, so I’m glad that they didn’t forget to include it. They also glazed it in a cream cheese icing, which was pure perfection. I was one happy customer. Carrianne and I both ended up choosing this doughnut when we saw it sitting in the display case. The carrot cake was very moist, which was pleasant. I would definitely get this doughnut again and again. It was my favorite.

Carrianne’s second doughnut was a chocolate one since they were out of her first two choices, which was sad, but lesson learned. Don’t go at 3 pm in the afternoon because then you don’t get the full selection of doughnuts (good news though – Whole Foods is now carrying some doughnut plant doughnuts, which is awesome!!). I barely got a picture of this. I had been drinking, so my food picture taking skills were not on top of their game. I stepped it up though and caught the second half of the doughnut. She enjoyed it. We were in a happy doughnut coma.

I just want ya’ll to understand HOW CUTE this place is. This is the bench to sit on while you nibble on your doughnuts and coffee. This was cute. I love the shapes of their doughnuts too. They have square doughnuts! It is a super unconventional place. They have interesting flavors like lavender and roseseed. I love unique places like this because it is what makes New York City so awesome and special. I can’t wait to explore what other places are on the best thing I ever ate list. If you are ever in the city, this place is a must see!

Hahahah me with my doughnuts to go. This is the aftermath of a thing that is called rave brunch. I recommend the experience. It is definitely one for the memory books. Anyways I hope ya’ll enjoyed my review and that ya’ll actually go here if you are in New York. You definitely won’t regret your decision. Hope ya’ll have an awesome rest of your Sunday. The Greatest Meal of My Life

Hey ya’ll! It is my favorite day of the week: What I Ate Wednesday! I am so happy to be back in the country to participate in this. Luckily for ya’ll, I’ve been holding off to post for this special day, so that I could share the best meal I had on my trip with ya’ll and the rest of the foodie community! Thanks so much to Jenn for hosting this weekly event! Girl, you are a genius. Anyways now time for my meal. This was when we got to Sevilla. The day after we went to Toledo and went back to Madrid, we woke up the next morning super EARLY and hopped on a train to Cordoba where we would only spend a few hours. Thank god before we left I ate a Luna bar to tide me over.

Our first stop on the itinerary in Cordoba was to go to La Mezquita, which is a sort of catheral and mosque. It was amazing. I am a huge art history buff, I even took a course in my undergraduate studies. Near the end of the course we studied this famous architecture because it has a huge Moorish influence. The arches are probably one of the most notable features of this place since they go on and on forever. The columns themselves are also gorgeous. You can learn a lot about the time period of a building by looking at the crown of the column, which has the decoration part on top of the pillar. All of the carvings in the wall were very intricate too. It is amazing that such beauty like this can be created years and years ago when there was not that much technology and tools.

More arches and columns. Don’t worry I won’t torture ya’ll so much. I have about a million pictures of this one place. It was so beautiful that I just kept snapping away at everything. My eyes were a bit overwhelmed by everything, so I wanted to take enough pictures to be able to remember it later. There was a small amount of stained glass in the building, which was seriously breathtaking. I am a huge fan of stained glass (Jewish probz – or maybe art lover problems). I really just love art and architecture in general. If I could do something else in life (I wouldn’t because I love nutrition and health too much), but if I did it would have to do with art and architecture. I love it.

After La Mezquita, we headed off into these really small alley ways to find a synagogue. However the synagogue was closed for renovation, but luckily the Sephardic museum was open! I’m an Ashkenazi Jew, which means that I come from Eastern Europe. Sephardic Jews come from Spain, Morocco, etc etc. The museum was really cute though. It was three stories with each room being a different part of Jewish history in Spain. They had tons of old Spanish Jewish artifacts like a seder plate that was painted in the brightest colors. I liked that the Sephardic Jews were into very bright and vibrant things. It makes everything so much more beautiful. After this museum, our train was in an hour, so we didn’t have time to sit down and eat anything. We went back to the station and got on our train to Sevilla. Once in Sevilla we were starving, so we went to look for something that was open to eat. However it was siesta around this time, so we were getting nervous that nothing was open. Luckily we ended up at La Azotea, which had the best meal of our entire trip.

This may have been my favorite tapas plate of the entire meal. It was wontons with goat cheese and shrimp inside topped with a spicy aioli sauce and scallions. Ummmm yes. It was like an asian fusion with spanish food. The wontons were really hot, but the cheese just melted into your mouth as you bit into it. The shrimp was chopped very finely, so that the texture was not a bothersome at all. It was the perfect dish. I could have eaten about two or three plates of these and called it a meal.

This was a fish plate. It had a small filet of fish on top of a bed of greens, tomatoes, and this garlic sauce. It was also topped with parmesan flakes. This was a medio portion, which meant that it was half of what the ration is. It was cooked perfectly. The fish was extremely flaky and fresh. The tomatoes were so good too. When you mixed everything up with the sauce, it was the perfect bite. There were some other good looking fish plates that went by us as we sat waiting for our food. We wanted to eat everything.

This looks extremely weird, and a little bit like sushi. However it is just some brown rice and meat stuffed into a seaweed wrap and topped with either an egg or caramelized onions. When I first saw this dish on the table, I was a bit worried. It looks a little sketchy, however it is an explosion of deliciousness when you shove it in your mouth. You expect it to be a bit bitter, but instead it is extremely sweet in a savory sort of way. I would have definitely ordered this again.

Croquettes! We obviously couldn’t have gone one meal without eating at least one of our favorite traditional Spanish foods. These were AMAZING. It was like a sweet duck sauce underneath the croquettes, which were just simply filled with ham and cheese. They were fried super crispy too, which gave the outside a nice crunch as you got into the soft inside. These were definitely one of the best croquettes I had on the trip.

I believe that if you are having the best meal of your life, you definitely need to order dessert. Since this restaurant was so amazing, it was obvious that all of the desserts were going to be equally amazing. It was really hard to pick, but in the end we ended up choosing a chocolate orange souffle. It was mind blowing. When we broke it open, chocolate ganache spilled out of the cake. We ate it up in about five minutes. They must have thought we were American pigs, but oh well. It was good. Definitely the best meal of the trip. I wish we could have gone back at least one more time to try other things on the menu since there were so many tempting options.

Instead of having dinner like a normal person, we decided to head over and eat some helado (ice cream) for dinner. Such a good option in my opinion. We went to Rayas, which is a very popular heladeria in Sevilla. It was definitely worth the trek (later on we found out that there was one literally a foot from our hotel lol). My brother ended up getting strawberry cheesecake and dulce de leche. The strawberry cheesecake was definitely my favorite of the two. It was so creamy and rich.

I decided to go pretty simple and just get coconut. It was delicious. There were small flakes of coconut within the ice cream. I love fruit flavors of ice cream. I wish we would have gone back to get more because I would have gotten lemon or mango. You can’t go wrong with something simple. If I had my way, I probably would have just snuck behind the counter and sampled every single flavor. Yeah, I like ice cream. Foreign icecream is just so much better in comparison to American. I could live off gelato in Italy, but that is a whole different story. Back to Spain!

After we got our ice cream, we ate it and walked around Sevilla. We ended up at this awesome castle/church thing. I’m not really sure what it was, but it was gigantic. It looks cool at night. We walked through the Juderia (Jewish neighborhood) and even ended up attending some neighborhood party. Actually we think it was some political rally, but it felt like a neighborhood party to me. It was super awkward in my opinion and I wanted to leave. Eventually we ended up back at the hotel and went to rest for the next day ahead of us.

I hope everyone had a good WIAW! We are halfway through the week. I’m not sure why I count down the week anymore since I pretty much do nothing besides coach volleyball. It is just a habit I guess or I’m just super excited for the Maccabi games and graduate school. Who knows!

Baby, I’m back

Guess who is back, back, back, back again?!? MEEEE. I know ya’ll have missed me so much! I have missed ya’ll too. I’ve been crazy busy for the last month. I was working like crazy in a lab, I moved back to Austin, and then as soon as I moved back I was off to Spain! For the next week or so, I will be recapping my entire trip to Spain. Once that fun stuff is over, I have a TON of new recipes to share with ya’ll! I also have some pretty big news for ya’ll! I got accepted into the masters program at Columbia University for my masters of science in Nutrition and Exercise Physiology. Go Lindsay. Seriously still so proud of myself. I’m trying to figure out everything right now, so I will let ya’ll know if I end up going there (which I really really really want to go)! Now onto the big topic of Spain.

Oh god the flight was pure hell. I thought I was going to die. It wasn’t long, but it was the fact that we got into Madrid at 8:30 am and we had to wait at JFK for about 5 hours. It was definitely not fun. I was so tired when we got in, but we had to do a full day of activity!

This guy was hilarious. I am still not even sure what this is, but it was one of the many street performers we saw on our trip. After we checked into our hotel in Madrid, we wondered off into the streets of the city to find something to eat and see some fun things. This is one of the great things we saw that first day. My brother was obsessed with him. He would like move around and make these really weird noises. I was doing some epic stalker pictures of him as he moved around the plaza we randomly walked through.

When we eventually got to our hotel (we rode the subway all the way), it was around 11 in the afternoon. Then when we went out it was getting closer to 1 pm, so we decided that lunch would be the best option plus breakfast is not very popular there. We ran across this popular market, Mercado de San Miguel. It was actually really beautiful. The entire market was wrapped in glass windows that expanded from the floor to the ceiling, so you could see all the delicious stalls from the outside. As soon as we walked in, the fresh and delicious aroma hit our noses and our stomachs started to grumble. We obviously bee-lined to the first scrumptious looking stall we found, which was this seafood tapas one.

We got four types of tapas of the many that were offered. They were all different types of seafood on small pieces of toast. One of them was mussels, one was clams, one was salmon, and the other was tuna. They were so delicious. There was a nice blend of textures from the softness of the chopped seafood with the crunch of the toasted bread. It was such a fresh light snack to have. This was what I loved about Spain. You could have multiple tapas or small plates, so you would get to try a multitude of things. You also didn’t feel like you were overeating or anything since everything was very small. I was in foodie heaven at this point.

My favorite one was the oyster with a little caviar on top. You couldn’t taste the caviar. Only the rich flavor of the chopped oyster mixture. It was so delicious. It was creamy and sweet. I wasn’t even sure that it tasted like oyster, but that is what the label said at the stand. I was definitely not complaining. I could have eaten more than one of these, but there were so many more stands to try, so we had to keep going on.

Fried food? Yes, sign me up please. My family loves calamari, so as soon as we saw some fried squid we had to grab some to go. It was in a paper cone, which was handy because we were able to walk around the market while holding it and not making a complete mess everywhere. The squid was perfectly fried. It was crispy, but not greasy. Sometimes when people fry things, it gets really greasy and disgusting. The calamari was so fresh too. It was bursting with flavor as you ate each and every piece. My brother and I gobbled this up in a few minutes. We also tried some fried sardines, which was interesting. It tasted like fish sticks.

Introducing the Spanish food of croquettes. Fried cylinders filled with different types of creamy mixtures? Ummmm HECK YES. These were so delicious. That day we had a jamon (ham) and cheese one, a lobster one, and a shrimp one. It was hard to pick a favorite. It probably was a tie between the ham and lobster ones. The ham one was so cheesy with small chunks of chopped up Iberian ham while the lobster one was a creamy mixture of lobster and cheese. I was definitely a big fan, so this was the beginning of our croquette obsession on the trip along with our ham obsession (THERE HAM IS SOOOOO GOOD)!

After we went to the market, we decided to walk around some more. After a little while, we ended up in Sol, which was an area filled with shopping (obviously I was in heaven there). We wanted something sweet for dessert and there was this delicious looking bakery. In the windows, they had shelves of some of the treats they offered. We went in and ordered two things. One of them was a napolitana de chocolate, which is sort of like a chocolate croissant. Although I think this was better than your typical chocolate croissant. The chocolate inside tasted like a fluffy buttercream. The pastry was baked perfectly, so it was only slightly crispy on the top and soft all around. It was topped with some type of sugar. We weren’t really sure nor did we care because we shoved this in our mouth so quickly.

Hmmm this is interesting. A large white square. It is a meringue. It is definitely one of the more weird meringues that I have ever seen, but who cares since it was so delicious. It was soft and fluffy. It was so hard to eat though and we looked very awkward eating it. Every time my brother or I took a bite, our mouths were covered with meringue. It was very sweet, but I didn’t mind. It was like we were eating a soft cloud. I was sad that we never went back to the bakery because it was definitely my favorite bakery we ate at on the entire trip.

After all our munching adventures, we walked all the way to the Thyssen-Bornemisza museum of Art. There was a special Pizarro exhibit while we were there, which was very interesting. I have a huge love of art, duh, so I was very happen to explore all the museos that Spain had to offer. I am looking hella exhausted. I am even rocking the glasses look. My brother would get so pissed every time I wanted to take a picture. Too bad. We were definitely needing our siesta at this point though. We were dragging through the museum, which made me kind of sad because I wanted to really absorb the greatness of the art.

For dinner, we went to this tapas bar called Lateral that was very close to our hotel. We had taken a nice long siesta. It was good. The thing about Spain is that siestas are definitely needed. I haven’t been the one to nap during the day, but there somehow I was able to sleep. For the first dish, we had tortilla espanola. It was delicious. Another classic dish of Spain. It is pretty much a Spanish omelet. It was filled with potatoes and cheese. I was definitely a fan, but I had this dish before at a tapas bar in Boston.

This tapa was jamon con queso. The cheese was a delicious brie that was topped with Iberian ham. This was delicious. The ham is sliced so thin and it is has a wide variety of flavors in just one piece of meat. The brie was so creamy. This probably was my favorite tapas of the night. It made me fall even more in love with the greatness of Iberian ham.

The lower tapa was foie gras on top of a steak type of meat and the top was caramelized onions on top of the same type of meat. Oh man, how I love how Spain does caramelized onions. It sort of looks like a tablespoon of jam, but really it is a sweet mixture of cooked onions. We definitely had our fair share of onions after this meal. My brother and I also love foie gras. It was one of our favorite delicacies. We had it probably at almost every place that we ate at. Most people probably think we are weird, but ya’ll are the ones that are missing out!

These are abondigas, which are Spanish meatballs. I thought these were just okay, but I’ve definitely had better. Like the time I was in New York City. They were served cold rather than hot, so I think that is why I didn’t like the dish as much as the abondigas I have had previously. After our meal here, we ended up exploring a bit more. We ended up at this really cute rustic place that was most famous for mushrooms. We ended up getting a plate of mushrooms that was to die for. I forgot to take a picture because I was so exhausted at this point in the night. After dinner, we strolled around the city a bit, but then went back to the hotel. I was exhausted and passed out easily!

I hope ya’ll enjoyed my first day in Madrid! Get ready for some great pictures of food, sites, and random things. I have missed this community so much while I was gone! But now I’m back with tons of delicious things to entertain ya’ll with!

Chocolate Blueberry Pancakes

Hey ya’ll! I have survived yet another day of Insanity. I think today may have been the most intense one since there were no little breaks in between the intervals of exercise. I was sweating and panting, but I did it. 5 days in. A million more to go, no just 55, but I can do it! Gotta dig deeper as my friend Shaun T says. He kills me. Anyways I am sharing my flourless chocolate blueberry pancake recipe with ya’ll today since I promised I would yesterday.

Chocolate Blueberry Flourless Pancakes

1 banana (preferably a very ripe one)
1/2 c of liquid egg whites
1 c of blueberries
1 packet of 20 calorie hot cocoa powder
a sprinkle of chocolate chips

1. Slice banana into small slices and place into a mixing bowl. Then get a spoon or knife to mash it up. You want the banana mixture to be thoroughly mashed in the bowl. Try to get as little banana chunks as possible. You want it to be a creamy smooth texture.

2. Then add in the egg whites. Be careful because when I first attempted this recipe with egg whites I put way too many in the mixture, which was an epic fail since it was too liquidy. Maybe start with 1/4 c and add as needed.

3. Next you want to add in the hot cocoa. Mix it until the entire mixture in the bowl is brown with the chocolate.

4. Then you can throw in the blueberries. If you want you can add in the chocolate chips here, but I waited until I had the pancake batter on the pan to add the chocolate chips.

5. Spray a pan with non-stick spray and heat to medium-low heat.

6. Use a 1/3 c to scoop out the batter and place onto the pan. My pan was large enough to fit three pancakes on at a time. I then sprinkled two or three mini chocolate chips in eat one. Wait until bubbles appear in the batter and the edges firm up then flip the pancake. Cook until lightly browned on both sides.

7. Then if you want you can take some extra blueberries, microwave them, add in a few drops of water, and smash them to make a blueberry compote for the topping. If not use some sugar free syrup as a healthy topping.

These pancakes are so delicious and healthy. You know how I love to eat me some pancakes! I ended up making 8 pancakes from the recipe, so that was a first. Typically it makes 4-5 large sized pancakes. This recipe is such a healthy alternative to regular pancakes plus you are getting some good nutrients from the banana base of the recipe. I still enjoy pancakes with flour, but when you want a rest from all the flour or you want to enjoy pancakes more than one day a week then this is the recipe for you.

When I had these for breakfast, I was a happy and healthy camper for the day. Go out and make these immediately. I’m definitely going to be whipping up all kind of creations with the basic flourless pancake recipe. Blackforest, almond joy, samoa, lemon poppyseed, and anything else I can think of to throw in the bowl. This is why breakfast is my favorite meal of the day! You can have tons of various combinations of things to eat and they are all so tasty and delicious. Boosting that metabolism the right way!

WIAW the Art of the Party

Hey ya’ll! We are halfway through the week. Exciting. Today is the first day I woke up and was not sore. Success. I’m on my 4th day of Insanity and 2nd day of Hip Hop Abs. Shaun T does both of these workouts and it is quite funny to see the difference between him in both of them. In Hip Hop Abs he is super cheesy and hilarious while in Insanity he is super intense and motivating. I gotta love those workout videos. I think I like them because I can do them on my time and get an intense workout. I really hate the whole idea of driving to the gym, etc etc. Anyways today is my favorite day of the week, What I ate Wednesday. Thanks Jenn for hosting such a fantastic day every single week! Today mine has a special theme, ART. I love art and Austin is surrounded by art as you will see throughout my post.

In Austin there is this really cool place called Hope Garden (although the name may have been changed) where graffiti artists can come and express themselves on the walls of this place. There is this huge castle behind all the walls too, so I think the name may have something to do with a castle. This was one of my favorite pieces at the place. I took my best friend when she was in town from Boston and it was cool seeing so much artwork in one space. I love graffiti to be honest. I really don’t think it should be illegal if it is like this or Banksy style.

For breakfast I had chocolate blueberry flourless pancakes. These were delicious. I made a blueberry compote for the topping. Such a good idea. I will definitely be sharing this recipe with you tomorrow. I ended up making two servings of it. That was probably because I used egg whites this time instead of just a regular egg. I probably would have had even more if I used a 1/4 c to scoop out the batter, but last minute I was like why not use a 1/3 cup. I made 8 pancakes total. I know what I’m having for breakfast tomorrow!

Healthy snack alert! I made kale chips. I am obsessed with kale chips. Usually my roommate makes them and they are so crispy and delicious, so I thought why not create my own. I think I put too much kale on one pan, but they still came out crispy. I topped mine with nutritional yeast, Parmesan, and olive oil. Such a winning combination. Kale is really good for you, so I definitely recommend making these or making a salad of kale in order to get a large amount of nutrients.

I was walking town lake in Austin when I saw this one. We were just about to go across a bridge to walk the other side of the lake when I noticed this. I love shoes, so obviously I had to snap a picture of this. I love that small little things like this are just hidden all around the city waiting for someone to discover it. I think it just makes us more unique. Keeping Austin weird.

You know I had to throw a salad into the mix. This one has spinach leaves, veggie patch falafel, and slices of mushrooms that I stole from my brother. He wasn’t using them anymore, so I thought why not throw them in my salad. These falafel balls are amazing. They are from the same company that made the meatballs I used in my meatball sub recipe, so you should definitely check out all the products they have to offer. I swear vegetarians get the best frozen food products. Noms.

My favorite banana truck has been open for a little while now for the new season, so I obviously had to go get me one of these bad boys. I just got a plain one. It had dark chocolate and was rolled in sprinkles. I follow them on instagram and they have specials occasionally, which I’ve been really wanting. One of them was called an Almond Joy. It had chocolate, caramel, coconut, and chopped almonds. It looked like a banana heaven on a stick. I can’t wait to check out what this week’s special is.

This is what I am probably obsessed with most in life. Cauliflower crust pizza. Ever since I made it for the blog, I have been eating it non-stop. This has honey bbq sauce, sliced ham, pineapple, and low moisture mozzarella. It is so good. I think I cooked the crust perfectly this time. It was crisp and browned just the way it should be. The honey bbq may be the best sauce to put on the pizza. It is sweet yet tangy. It goes well with the citrus flavor of the pineapple and the saltiness of the sliced ham. This recipe is my best friend.

This is an iconic graffiti in Austin besides the I love you sign. It says never give up and has pacman next to it. This is on town lake too. I think it is super cute and motivational especially for the runners and bikers that always go past it on the trail.

Since summer is upon us, my mom and I decided to get some fresh fish. Halibut is our favorite and it was on sale at Central Market, so we were like why not? We also ended up buying a spicy soy glaze for the fish. It wasn’t spicy at all and had just the right amount of flavor. The halibut was meaty and cooked perfectly. The meat just flaked off as you dug your fork into it. I made a side of green beans for it. Yep, canned green beans. Can’t live without them.

Hey ya’ll! Sorry I was gone for so long, but I decided to take a mini vacation from my responsibilities (lets be serious, blogging is my only one right now haha). I’m back again because I have so many wonderful posts of restaurant reviews, recipes, and other great surprises for ya’ll! Guess who’s blog is almost one year old? MINE! That is exciting. In the mean time I’m going to celebrate my favorite weekly party WIAW, which is hosted by Jenn. Seriously love it. It always puts me in a better mood to stare at beautiful pictures of food. Not that I’m in a bad mood because I killed my biochemical nutrition paper and the final. 4.0 for my final semester and Dean’s list yet again. Go Lindsay! Lets get it started in hurrrr (oh god I am not that lame)

Introducing one of my favorite combinations, cake batter oatmeal. You seriously can’t go wrong with anything that is cake batter flavored or themed. Plus the pile of sprinkles adds a happy cheer to this bowl of deliciousness. I had to top it with peanut butter for a creamy texture. It was definitely a good decision. Just looking at this bowl makes me happy. It is really hard for me to decide if I like oatmeal or pancakes more for breakfast, so I think I’m just going to say it is a tie. I have a ton of oatmeal recipes in my brain right now, so get ready in the next month for some epic, scrumptious recipes that will make you drool and run out to go buy oatmeal immediately. Score.

What is this? An apple? No. Um what? Yes, this is a pear. It is called a papple. Did I buy it partially because of the name? Yes, but also because I love pears and the fact that it looks like a freaking apple. My mom and I were at Central Market to get apples and some fresh fish when we ran across this interesting specimen. We decided to get one for each of us to try. The texture was very odd, but delicious. It was crisp like a pear, but had a crunch like an apple. The flavor was not overly sweet with a small amount of tartness to it.

I go weak for a good salad. This is my healthy version of a Chinese chicken salad. I left out the unhealthy fried crispy strings. It has avocado, mandarin oranges, sliced red onion, carrot sticks, grilled chicken, lettuce, and a nice sesame thai sauce that is slightly drizzled over the salad. Winner winner healthy chicken dinner. I love making popular salads a lot less calorie packed. I’m going to do an eat this, not that post in regards to my recipe redux of fatty salads that people consider healthy at many popular restaurant chains.

This sort of looks like a pile of mush, but a really delicious pile of junk. Don’t worry I didn’t eat this all in the same day. The base of this entire box of goodies is lettuce. It is topped with onions, mushrooms, carrots, edamame, curry chickpea salad, tofu in pesto, broiled cauliflower, sauteed mushrooms, a little piece of salmon, some grilled zucchini, and some black olives. This was one of the most filling meals I’ve ever had. My favorite thing in this box of whole foods salad bar goods was the curry chickpea salad. It was not over powering with the curry and it had a sweet flavor with the mango and edamame in it. Yum. I love the salad bar.

Every since my mom’s birthday, we have been on the look out for the black forest parfait at Whole Foods. However THEY HAVEN’T HAD IT. Seriously depressing. We decided to try this lemon berry parfait instead. However since we are total idiots, we didn’t realize that the lemony goodness was on the bottom of the cup, so we were eating it and being like WHERE is the lemon dang it. Once we discovered the lemon it was like ooooo that is good, but still not as great as the black forest one. That is just my favorite. You can’t go wrong with chocolate and cherries. Noms.

Barf in a bowl? It sort of looks like it, but instead it is my delicious creation with my left over spaghetti squash. It is the healthy version of mac n cheese. It is crazy good. I know it looks disgusting to look at, but trust me when you have a bite it it just cheesy goodness that melts in your mouth. I will definitely have to take more pictures and make this recipe again, so I can actually share it with you. It came to me on a whim when I got home from volleyball practice. I was in the mood for cheese (my favorite food group – you are obviously sick if you don’t like cheese), so I was like hmm mac n cheese, but let me make this healthy.

Healthy snacks by Lindsay. I am getting good at this. I am definitely going to add this to my snack post that is coming real soon. This was homemade cinnamon chips topped with chopped strawberries and a little sugar free chocolate syrup. Dessert nachos. This is the way to go. It was cinnamon sugar that is dusted on the tortilla. It makes for a subtle sweet flavor. I definitely can’t wait to make more of these with different toppings.

Heaven in little squares? You bet. I have one fatty awesome treat coming for you all in the next few weeks. These are petit fours filled with Bavarian cream and lemon filling. I know you are all now drooling. I have more pictures, but I’m definitely going to have to hold back on ya’ll for the meantime because you will be crying and yelling at me to give the recipe to you immediately. These things are fantastic. My mom and I made them for my volleyball team, and we are getting ready to make some more for a wedding shower. I think I should just quit at life and open a bakery. Food truck maybe? If life doesn’t work out then maybe that will be the plan.

I hope you all have a fantastic Wednesday. I’m currently working on some diet plans for a client I have. If this is a success, I’m totally going to use this person as my business card for my future nutrition practice once I get my license. Also I have tons of artwork I’m doing plus I’m working on tons of scientific papers for my professor. I’m out on the job hunt too, but it isn’t looking good since I’m going to Europe for two weeks. Oh well, those people are losing out because I’m awesome.

WIAW (Life Without Plastic Bags)

Hey ya’ll! It is that time of the week again when bloggers around the world share what they are eating. It is one of my favorite link-ups, known as What I ate Wednesday. I bet there are other goods ones out there, but I just love to see what everyone is eating to get inspiration for recipes and blog posts. Thanks to Jenn for hosting this fantastic day! Seriously pure genius for coming up with it!

photo(3)Since school is pretty much over for me, I ended up going to my mom’s to study for finals and what not. Well I decided that I was going to cook up a storm in the house and make a ton of new recipes to share with ya’ll. So I drove over to the local HEB in my neighborhood to load up on groceries, but little did I know that there are NO more plastic bags (disclaimer: Yes, I actually knew, but I forget because this is sort of ridiculous). I’m all for helping the environment, but they should have plastic bags on hand just in case people forget. I have a million reusable bags, so I’m not going to spend money to buy another one just so I can carry my groceries like a normal person. Nope, I totally put everything back into my cart and rocked the no bag look. I got some stares.

photo(6)I was not going to let the plastic bag problem stop me. Although once I got to my house, I got reusable bags to help get everything out of the car. Now to the yummy part of the story. For breakfast I had chocolate covered strawberry cheesecake oats. Umm yes. I have an obsession with cheesecake oats (fat free cottage cheese + oatmeal). It seriously makes the oatmeal have a creamier and richer flavor to it.

photo(5)Close up, in yo face. You can’t go wrong with chocolate chips and strawberries. I have so many oatmeal recipes to share with ya’ll, it is ridiculous. I need to step up my oatmeal sharing game. Heck, I have so much to share with ya’ll. Maybe I’ll start posting two-a-day. That is a lot of effort for me, so probably not. Senioritis problems. You would think that maybe my second senior year I wouldn’t be so lazy, but no I think I’ve just gotten lazier as time goes on. At least graduate school will whip me into shape.

photo(4)So my family calls me snacky or snack monster, which is actually pretty nice I think since it could definitely be a lot worse. Hello, my name is Lindsay and I am addicted to snacks. I actually have an awesome post planned for the near future about healthy snacking. Since I love to snack, I decided that I need to come up with more healthy choices for snacks. Therefore apple nachos have come into the picture. You can do a ton of varieties with these bad boys. I decided to go the chocolate and caramel route, but you could definitely do granola, chocolate chips, etc. Pretty much anything goes good with these bad boys.

photo(2)Yes, I am one of those weird people that love salads. I could eat a salad for lunch and dinner if I could. The key to having a good salad is building it up with tons of healthy toppings. This is my healthy version of a Waldorf salad. It has grapes, apples, walnuts, celery, and chicken in it. Such a winning combination. Usually there is a type of gross cheese in it (yes, there are some gross cheeses out there), so I went sans cheese on this one.

photo(1)Three cheers for another healthy snack. I saw this on Pinterest a while ago, but it was for camping. Who needs to go camping to make a delicious treat like this? Not me. I made my version of a banana s’mores with marshmallows and chocolate chips. It was delicious. I will share how to actually make this when I post about healthy snacks, but just looking at it is making me drool and want another one. Like the apple nachos, you can do tons of combinations with this one.

photoYou know just staring at this picture you want the recipe. Too bad you are going to have to wait a few days. I’m trying this whole thing were I am organized about my blog posts, and so far it is going pretty well. It just means that I won’t be posting up this recipe yet. However it is spaghetti squash pad Thai with tofu. Yes, it is as amazing as it looks. I’m seriously getting excited just looking at it because it is a beautiful dish. Plus I remembered I have leftovers in the fridge! Go me.

photo(7)MWAHAHA the snack monster has arrived. This is a not-so healthy, but not-so fattening snack. I have a passion for snowcones. Maybe a deep love too. I love going around to try all the snowcone stands in Austin. I have discovered a few more to try out and review, but this is from one of my favorite stands: Casey’s New Orleans Snowcones. You know I have to represent the city I was born in, so I’m a loyal customer. Plus these are just so darn good. This one is a strawberry cheesecake snowcone. The flavors are so rich in it and the ice is soft. I really despise when there is hard ice that doesn’t soak up the flavor. Lame.

I hope everyone is having a fantastic Wednesday! I’m currently studying for my Medical Nutrition Therapy final and make up exam. Yes, I have two exams tomorrow in the time period for one final. I think I can pretty much rock it. Although my make-up exam is on enteral and parenteral feedings + some other lovely junk about the GI system, so it is not the most pleasant topic. Hope ya’lls day is less gross than mine!
