Burger Heaven in The City

Hey ya’ll! I survived my first graduate school midterm. I feel pretty good about it, but there were a few true or false questions that kind of sent my brain through a loop. Especially because one of the questions we had never talked about, but oh well. I feel happy with my success so far as a graduate student and hope that I will continue on with it. We are only allowed to get two Bs in a certain number of classes to continue on the program, so I’m super motivated to do awesome. Anyways I am going to share with you an awesome review of the best burger I have had so far in NYC. Bareburger. There are a ton of locations in the city, but we ended up going to the location on 46th st. It was such a fun atmosphere. We only had to wait a few minutes, so that was nice, especially because the third person in our party was running late.

The menu was huge. It was really hard to pick because there were so many delicious looking options. You could order a premade type of burger, which came with a bunch of toppings and a general theme, and then you could choose the type of meat that you wanted with it. There was also the build your own burger, which you could pick toppings, bun, and meat. The different themed burgers looked so good, and each even suggested the type of meat that tastes best with those toppings. While we waited for my friend to show up, Carrianne and I ended up looking through the menu and debating back and forth over what we were going to get. While we waited, Carrianne got a ginger soda, which was delicious and we ordered an appetizer.

We ended up getting sweet potato croqs. These were sweet potatoes with sharp cheddar cheese and they are deep fried. They were served with habanero chipotle mayo and stone ground honey mustard. These were little fried balls of heaven. The sweet potato texture was smooth and the bread crumbs gave a nice crunch to it. The cheese inside made it very creamy. The sauces were amazing. I definitely couldn’t pick a favorite. They ended up giving us two other sauces, which were BBQ and a spicy ketchup. There was a good amount in the basket, which was nice. We ended up eating this so quickly. We were starving. They were served really hot too, which is a nice thing because apparently some establishments don’t serve hot food.

Aren’t these so cute? They were the regular ketchup and dijon mustard containers. I loved that the restaurant actually had a bear theme to the whole place. There were bear heads (not real ones) on the walls, that were painted different colors and patterns. It just made the ambiance of the restaurant really fun and entertaining. There was so much to look at and see.

I was debating over getting the big blue bacon or the maui wowie. I ended up choosing maui wowie because I can’t resist pineapple and turkey bacon. The burger came with smoked mozzarella, pineapple ring, turkey bacon, fried onions, fried roasted red peppers, and buttermilk ranch. Bareburger recommended getting the burger wild boar, but I ended up just getting beef with mine. I ordered my meat medium and got it on a brioche roll. The bread was amazing. It was toasted to perfection, so it wasn’t soggy when the burger and sauce soaked through. The meat was cooked exactly as I ordered and was extremely juicy. The toppings were the most appetizing combination ever. The crunch and smokiness of the turkey bacon went well with the sweetness of the pineapple. The spice from the peppers was cooled off by the buttermilk ranch, which also gave the burger a nice creamy texture when you bit into it.

I mean just look at this burger. It is heaven staring right back at me. I can’t wait to go back to try more burgers. This place sort of reminds me of Hopdoddy in Austin, TX, which is one of my favorite burger places ever, so this obviously means that Bareburger is legit. The best thing about this place is that there is more than just burgers on the menu. They have a breakfast brunch menu, breakfast paninis, and so much more. I pretty much have decided that I am going to go here at least once a month, so that I can enjoy a new thing on the menu every time!

We ended up splitting a large basket of onion rings and fries. The onion rings were the bomb. The breading on the onions were seasoned and fried perfectly, meaning they weren’t too crunchy or soft. The onion rings were so good that I wish we just would have ordered an entire basket of onion rings. Not that the fries were bad because they were actually golden and crispy, but soft on the inside. I just loved the onion rings so much that it was sad when there were no more left. Of course they came with more types of dipping sauces, which was awesome.

Carrianne ended up getting the Big Blue Bacon. It had Wisconsin Blue Cheese, country bacon, sauteed mushrooms, fried onions, and bacon marmalade. The burger was recommended with ostrich, but she ended up getting beef. She ordered her beef to be medium well. Also she ordered hers on a brioche bun. She was in a burger coma as she chewed through hers. She said it was delicious. The bacon marmalade had a sweet, yet smoky flavor that went nicely with the cooked vegetables. The cheese was also not overwhelming, which was nice. My other friend ended up getting the same burger as me, but without the buttermilk ranch. After our meal, our stomachs were so full that we could barely walk. We ended up going along the water, but our stomachs were so full that we had to sit on a bench for a good amount of time before we could continue our journey. All in all, I recommend bareburger as a must if you are visiting NYC or if you live here and haven’t already gone! It is a burger paradise.

Cauliflower Fried Rice

Hey ya’ll! Hope everyone is having a good Monday instead of having a bad case of the Mondays. I love Monday because I don’t have class until 3 in the afternoon, so I can wake up around 8 am and get all the things I need to do done for the day before class. It is a nice schedule. In more delicious things, I have another yummy recipe to share with ya’ll. This one uses one of my favorite vegetables: cauliflower. Ya’ll know how much cauliflower I eat from my Cauliflower Pizza Crust recipe. I could just eat those things forever (I have basil in my fridge right now just so I can make some pizzas). But back to this new recipe. It contains a few of my favorite things: Asian food, pineapple, and cauliflower. Hmmmm what could that be? CAULIFLOWER FRIED RICE!

Cauliflower Fried Rice

2-3 cups of finely grated cooked cauliflower (I used a food processor to chop it up)
3 tbsp of soy sauce
1/2 c of egg white liquids
1/2 c of chopped onion
1/3 c of chopped garlic
1 c of vegetables/mix ins (pineapple, peas, carrots, broccoli, etc)

1. Chop up onion until fine pieces. Place into a pan sprayed with cooking spray and heat until the onions become see through.

2. Add in your mix-ins, such as broccoli, peas, carrots, pineapple, tofu, etc. Cook until you can see the vegetables are cooked and have lost all traces of frozen marks.

3. While the vegetables are cooking in a pan, place your cooked cauliflower into a food processor to chop. Mix it in until it appears to look like a rice texture.

4. Also in a small pan, cook the liquid egg whites until you have a pan filled with scrambled eggs.

5. Toss in the scrambled eggs, chopped cauliflower, and 3 tbsp of soy sauce until all is throughout mixed.

6. Once everything has cooked through for 3-4 minutes, you are ready to enjoy. This dish makes about 2-3 servings depending on how much extras you add in.

This dish is seriously delicious. You are getting a ton of nutrients while consuming a tasty meal. Fried rice can be full of calories for a variety of reasons. This fried rice is a much better and healthier option for you, especially for those of you that don’t get enough vegetables throughout the day! Cauliflower is such a good base to use in a variety of recipes. Cauliflower can be considered an antioxidant due to it containing Vitamin C and manganese. These help lower the levels of oxidative stress, which is extremely important in regards to a wide spectrum of health problems. Cauliflower also contains Vitamin K, which helps play a role in anti-inflammatory (good for me since I always need to decrease my inflammation)! Also cauliflower aids in digestive and cardiovascular health. It contains around 12 g of fiber for ever 100 calories of cauliflower. Wow! That is awesome. Plus you are getting fiber and other beneficial nutrients from whatever you add in.

I ended up topping mine with some sriracha because I needed that little extra kick with my meal. With my leftovers, I’m going to add in some tofu to give it some protein. I think that will be perfect along with some more sriracha sauce. I’m bringing this to class for dinner. People will probably stare at me, but not like I care. I’m always eating in class. I bring the loudest snacks ever to class like carrots and apples. It is always super awkward when it gets quiet and I’m like chomping away on things. Anyways I hope ya’ll enjoyed this! I definitely recommend going out and making this immediately!!

Sweet Potato Nachos

Hey ya’ll! I have a delicious recipe in store for you. Now that I live in New York City, I’m pretty far away from my delicious Mexican food (although I live in a Dominican neighborhood, so I’m at least getting some Spanish food in my life). I decided that I wanted to make something Mexican inspired in honor of my home. However Mexican food is full of fat, calories, and food items that are not so healthy for you. That gave me the idea to “healthify” one of my favorite dishes: Nachos! I could have made tortilla chips from baking corn tortillas, but that is the easy way out. I ended up making my base or chips from baked sweet potatoes.

Sweet Potato Nachos

2 small sweet potatoes
1-2 tsp of olive oil
1 pinch of garlic powder
any other spices or seasonings you want to add
Cheese of choice (I used fat free Mexican Blend)

Topping ideas:

Cilantro
Tomatoes
Jalapenos
Onions
Black Beans
Banana Peppers
Chives
Chicken/Beef

1. Preheat oven to 350. Wash your sweet potatoes and peel them until there is no skin left.

2. Then slice both potatoes in thin round slices.

3. Place in a small container, pour in olive oil, and mix well.

4. Place slices on a baking sheet and sprinkle with garlic powder. If you have added other spices, sprinkle them on at this point.

5. Place in the oven and bake for 35 minutes.

6. Take it out of the oven, but leave the oven on. Then sprinkle on cheese. Depending on personal preference you can either add on the rest of the toppings now or wait until all the cheese is melted. Personally I put the toppings on then put the cheese on top because it made the toppings cheesier (ya’ll know I love cheese). Then place in the oven to monitor until the cheese is melted.

7. Enjoy!

This was the perfect dish. I wish I would have had more things to place on as toppings, but I had forgotten things such as avocado at the supermarket. Next time I will definitely be having black beans and avocado on top of my nachos. It would have been creamy and delicious. Plus including more protein would help you stay fuller. I added Greek yogurt on top of mine instead of sour cream. It was a much better option that putting sour cream on it. Sweet potatoes are a much better option than regular tortilla chips for a variety of reasons. Sweet potatoes are extremely high in vitamin B6, which helps reduce homocysteine in our bodies. Homocysteine has been connected to a variety of diseases and has even shown a role in heart attacks, so eating more sweet potatoes is definitely a good move for those that are heart health conscious. Other nutrients that sweet potatoes contain are Vitamin C, Vitamin D, iron, magnesium, and potassium. While that is a long list, one of the most important and well known compounds that sweet potatoes contain is carotenoids. More specifically, sweet potatoes are packed with beta-carotene, which helps with eye function and to boost our immune systems. Besides the many health benefits of sweet potatoes, they are extremely versatile to cook with. Just look at my recipe! You can make sweet potato chips. How awesome is that?!

I just look at these and it makes my mouth salivate. Thank god I bought 2 lbs of sweet potatoes at Trader Joe’s! But actually I wont be making these anytime soon because I have a ton of different sweet potato recipes for ya’ll coming up sometime soon. I hope everyone had an awesome Sunday! Mine has been extra special since the University of Texas Longhorns won against no. 2 Stanford today in volleyball (not to mention that they also beat number 1 Penn State the day before). Hook em! Ya’ll know how much I love my volleyball. It has been hard not being able to go to the games, especially since they were extremely exciting this weekend. My mom and brother went, so at least they were sending me the scores, videos, and hilarious quotes from the crazy people in the audience!

Cauliflower Crust Pizza

Hey ya’ll! It is Friday, which I couldn’t be happier about. I feel like weekends are still magical even when I’m not in school. Funny story about last night though. I had a major panic attack at 11 pm last night and emailed my adviser at school about 4 times. When I transferred back from Boston, I had to get approval for all of these hours since Texas is weird and requires all of these dumb credits (like Texas History – will not use that class ever), so I needed to make sure that I was still under the minimum hours of transfer credit allowed. However I convinced myself that I had way too many transfer hours and that I wasn’t going to be able to graduate and go to grad school. Luckily my adviser told me I was crazy (no he didn’t, but I bet he was thinking I was) and that I was fine. Thank god. I was going to go cry to someone at the university or something to make it better. Since that was so stressful, I have an awesome and delicious recipe to share with ya’ll! Cauliflower pizza crust. Sounds kind of gross, but oh my buhjeezus is this stuff good!

Cauliflower Pizza Crust

2 cups of grated cauliflower
1/2 c of finely chopped basil
1/3 c of liquid egg whites
1 egg
2 c of fat free shredded mozzarella cheese

1. Preheat the oven to 450. Then you  need to cook the cauliflower. I used frozen cauliflower, so I just boiled some water, threw in the cauliflower, covered, and let cook in boiling water for 4 minutes. Once it was done cooking, I removed it from the water by draining it in the sink. Then I placed it in a food processor to chop into small bits. I then placed two cups into a mixing bowl.

2. The first time I made this recipe, I finely chopped all the basil by hand. That took forever. New and smarter plan is to throw the amount of basil you want into the food processor and chop it until you have fine pieces. Throw the basil into the mixing bowl with the cauliflower.

3. Then add the liquid egg whites, cheese, and 1 egg into the mixing bowl. Stir well until it is a thick clump.

4. Get a cookie sheet and place a piece of parchment paper over it. Spray the paper with non-stick cooking spray.

5. Grab clumps of the “dough” to make 4 mini pizzas. You keep adding to each pile until they are about the same. Then place the pizzas into the oven for 20 minutes. If the pizzas are not as crispy as you would like, add another 5 minutes to the time. However be careful of burning them.

6. Once you remove from the oven, add on toppings that you would like. I made one pizza with tomato paste, fat free slices of ham, and pineapple. The other pizza had mushrooms, onions, and sliced tomatoes on top of it. Both pizzas were topped with fat free mozzarella and a sprinkle of low moisture mozzarella. My mom topped her pizzas with a larger amount of cheese. It just depends on how many calories you want to consume from cheese.

7. You then place the pizza back into the oven until the cheese has completely melted. This could either be very quick or slow, depending on the type of cheese you have topped your pizza with.

Hello to cheesy goodness. You seriously can’t even tell that the crust is made from cauliflower. The basil and cheese masks that pungent cauliflower flavor, and provides a nice savory flavor to the dish. The crust wasn’t extremely crispy, so I recommend going light on the sauce. I learned my lesson from the first time we attempted this recipe. I was in charge of putting on the sauce, which I overloaded on and it soaked through the crust and all over the pan. It was still delicious though. You can cut the pizza into four little slices too. However it will not be like a perfectly cooked slice of pizza from Italy where it just flops. It takes some napkins to eat these. It is also really good as left overs.

The Hawaiian pizza was definitely my favorite. Later on when we made more, I decided to use a honey BBQ sauce for my base instead of tomato sauce. Best decision ever. It was amazing. This is now my go to healthy recipe. It provides you with tons of fiber, it is low calorie, and it is a tasty option when eating healthy. I can’t wait to try all different kinds of toppings. Mexican pizza? Pesto pizza? You bet I have all kinds of crazy ideas swirling around in my head right now. My mom and I are such fans of this recipe that we have already made it three times and she just bought more cauliflower today, so we could eat it again. Noms. Go out and make these immediately! You definitely won’t regret it.

Bubble Up Pizza

photoYou hear the word bubble up pizza, and you may be a little scared about what that really means. Bubble up pizza is a funny thing for my family because it brings up a lot of memories. My mom and I love this dish, but it does scare my brother because one time when he was home alone it exploded on top of the stove. Trust me, the dish is really good and you will want to make this all the time once you taste the deliciousness it has to offer.

1 roll of low fat biscuits (10 rolls)
1 c of chopped onion
1 15 oz can of tomato sauce (15 cal for 1/4 c)
1 1/4 c cheese (used 1/2 fat free mozzarella and 1/2 reduced fat)
1/2 c chopped green bell pepper
1 c chopped mushrooms
1 package (20 oz) ultra lean ground turkey
a few dashes of garlic powder

1. Preheat oven to 350 degrees.

photo(6)2. Brown ground turkey and drain if needed.

3. Stir in onion, tomato sauce, garlic, pepper, and mushrooms. Cook until thoroughly mixed and peppers begin to soften.

photo(5)4. Cut each biscuit into four pieces and then add into the meat mixture (make sure pan is removed from heat).

5. Make sure that the biscuits are thoroughly covered with sauce.

photo(4)6. Pour into a 9×13 baking pan that has been sprayed with pam.

7. Place in the oven for 25 minutes.

8. Remove from oven to add the cheese evenly over the top of the casserole and place back into the oven for 10 minutes or until the cheese has melted.

photo(2)And now you have a bite of delicious food. You can cut the casserole into 8 servings. This is definitely one of the best healthy dishes I’ve had in a long time. That is probably because I haven’t really cooked that much besides my normal staples in a long time, but that is about to change. I’m ready to share more recipes and try out some of my crazy experiments. This recipe was actually different from my family’s old recipe, but I liked to added touches of the green peppers, onions, and mushrooms. I think I am going to have to mess around and add some more vegetables in the mixture next time.

A Late Night (WIAW)

Hey ya’ll! Sorry I have been all over the place, but school is crazy right now. I have two labs where I have to go in later in the week in order to check on bacteria growing. Maybe I just love bacteria cultures so much that I actually do this for fun instead of for class? No, just kidding. I’m not that nerdy. Anyways it is time for my favorite day of the week: What I Ate Wednesday. Shout out to Jenn for coming up with such an awesome idea!

Look at those bad boys. Pumpkin Belgium waffles. Yes, I definitely scored that morning before class. My amazing roommate has a waffle maker! I just recently found this out even though I’ve been here about a month. How slow am I? Obviously I am definitely going to be taking advantage of this. I realized I didn’t have a lot of ingredients though, so I threw these waffles together.

Nom. These were amazing. I used some bisquick gluten free pancake and waffle mix, threw in some almond milk, egg substitutes, and canned pumpkin. Topped it with some banana slices and sugar free syrup. Delicious. I was so full that I didn’t have to come home in between classes to make myself a snack. Success.

For lunch I had a black bean burger that had black beans, garlic, red pepper, oats, onion, and a few other goodies. I placed the patty on top of some chopped lettuce and topped it with some dijon mustard.

This was a delicious meal. Due the large amount of fiber in the burger because of the oatmeal and beans it was super filling. It had the right amount of spices added to it, so it wasn’t just a plain tasting burger. I will definitely have to make these again sometime soon and topped with onions, tomatoes, and avocado. Mmmm. Can’t wait.

On Monday it was Rosh Hashana, which is the Jewish new year. I spent it having a nice meal with my dad’s side of the family at my grandparents new house. It was actually really delicious. I mean the chef was beyonce’s chef for the summer in Marfa, TX. Obviously I’m a true diva now. He also cooked for Johnny Depp, but Beyonce is just way more fab.

Since I’ve gone vegetarian, I could not eat any of the meat that the chef had prepared, but I did not really care. Instead I had a pile of vegetables and a rice dish. The vegetables included grilled eggplant, squash, onions, some broccoli, a salad, a carrot pudding, and some peppers. The eggplant was by far my favorite thing. I really want to get the recipe to recreate it because it was just that good.

I even made my own gluten free challahs to bring for myself to eat. Obviously I didn’t eat two entire challahs. I brought one to the dinner and I froze the other one to bring to my apartment. I ended up eating about 5 pieces to go with my vegetables, so I would have a substantial meal. The challah actually turned out pretty great too. My mom and I were worried about how it would come out because the flour is completely different than regular flour, but I thought it was quite delicious. I’m still enjoying the challah right now, microwaved, and topped with raspberry jam. Delicious.

Hope everyone has survived halfway through the week! I can’t wait for the weekend, but not really because I will be doing a lot of studying. Anyways I have to get back to writing my epigenetics paper. Boo.

 

WIAW (I’m Back)

Hey ya’ll! Sorry I’ve been MIA from the blogging world. Lets just say I have a knack of misplacing things in my room and stuff. For the past week and a half, I haven’t been able to find my camera charger. Uh oh. That means no new photos for the blog since they have all been hanging out on my camera. Thankfully when I was home this past weekend, I found my charger in my backpack that I took to Boston. My bad. So now I’m back and just in time for my favorite day of the week: What I Ate Wednesday. Thanks to Jenn for hosting my favorite day of the week!

Hello to a breakfast of champions. Sometimes when I go grocery shopping I eyeball certain things, like these Vans lite waffles, and debate if I really need them. I then come up with amazing breakfasts like this one to justify why I really need to buy these. Heck plus they were on sale, so it was calling to my Jewish nature.

This lovely creation was two Vans lite waffles, a sliced banana, strawberry slices, fat free vanilla yogurt, and a sprinkle of chocolate chips.The only thing I thought was missing was some dark chocolate sauce. Oh well, I definitely will be putting that on top next time. This was the perfect breakfast and it held me over through the morning until I ate my lunch after back to back classes.

Smoothies are one of the best snacks out there. You can totally customize them to your preferences and they are very filling if you put lots of fiber, like I do, in them. Mine was a chocolate pineapple smoothie topped with some fat free whip cream and dark chocolate sauce (I love my dark chocolate – who doesn’t).

My mom and I went on a little shopping spree the other weekend, and ended up at godiva because a couple of new flavors were out. We ended up getting an 8 piece box of chocolates – total score in my mind. The flavors are birthday cake, chocolate chip cookie dough, pumpkin cheesecake, pumpkin spice, walnut brownie, and pineapple hummingbird. So far the birthday cake is my favorite. I pretty much love anything birthday cake flavored, so throw it in a chocolate and I’m yours.

Since I have class literally all day pretty much, I have been needing to pack lunches that fit into my backpack and are easy to eat throughout the day. This means tons of salads. For this day in particular, I had a hamburger salad. I did meatless crumbles, shredded lettuce, sliced red onion, sliced pickles, mushrooms, and it was topped with mustard. Oh man. This was actually really good. I was impressed. Especially because I threw this right together before I had to go to class. Skills.

My mom and I are obsessed with Halibut. When we were at Central Market we saw some fresh fillets of halibut that were really thick, so we decided to get it and make fish tacos with. We were originally going to marinate it in some hatch chile soy sauce, but my mom realized that she had thrown it away. We ended up just tossing some olive oil, salt, and pepper on them.

The fish turned out amazing. It was flaky to perfection. We just ended up throwing them on some corn tortillas that we also got at Central Market, and topped them with diced onions and tomatoes. This was the perfect dinner.

Froyo is always the best night cap in my mind. You can’t get anything better than some low calorie frozen yogurt with amazing toppings. Definitely will have to do a review of the local froyo places in San Marcos sometime soon – I won’t complain about that!

Hope everyone has an amazing Wednesday! I’m dying because I just had my intermediate volleyball class, and I swear all we do is run instead of actually play volleyball. I’m ready to play!
