Gorging on Doughnuts

Hey ya’ll! It is Saturday, which for me means that it is my cheat day to eat whatever I want. Today we decided to celebrate my mom’s birthday a little early since I’m headed back to the big apple on Tuesday. That meant we ended up going to some food trailers on south first street. Specifically we had lobster rolls at Dock and Roll then for dinner we got doughnuts from Gourdough’s to go. So this post is all about the decadent, fatty doughnuts that they serve up.

Now let the food porn commence. No joke. I have some drool worthy photos to share with ya’ll today. This was my mom’s substitute for birthday cake. I was so happy that we ended up getting doughnuts to go for dinner later because I miss this trailer up in NYC. Not that I was eating this all the time in Austin, but I would definitely go once every four to five months in order to fulfill all my glutinous cravings that I have. Actually I don’t really crave anything, but it is just an Austin thing to do. Whenever I have friends visiting, this is a must on the to do or to eat list. I still haven’t been to the Gourdough’s pubhouse, which makes me sad, but I guess that will be on the list of next trip things to do.

My mom is a chocolate lover, so she ended up choosing blackout. She also loves brownies, so I think that definitely was another reason why she chose this bad boy. The doughnut has brownie batter, chocolate fudge icing, chocolate covered brownie bites, chocolate chips, and chocolate fudge. If you don’t love rich amounts of chocolate then this definitely is the doughnut for you. I thought it wasn’t too rich though. My brother warned that it would make you sick, but I had one bite and I thought it wasn’t too overwhelming and really delicious. My mom was in chocolate heaven.

Hello beautiful, I do love you too. This is my beautiful doughnut. Pretty much everything that is great in the world wrapped up in one doughnut. I ended up getting the Fat Elvis. It had peanut butter, bacon, maple syrup, and caramelized bananas. Really the doughnut had me at bacon and bananas. I love an elvis sandwich, so I thought that this would definitely live up to the hype.

Yeah it definitely lived up to the hype. This doughnut was sick (in a good way – for those of you that don’t know dorky slang). The caramelized bananas were the cherry on top of this doughnut. It was so great to mix the creaminess of the banana with the smokiness and crispiness of the bacon. It was a foodie’s heaven. The maple syrup obviously went perfectly along with this since it was another sweet taste. The doughnut itself was a pretty simple cake that served as the base for the toppings. I would definitely get this again because it didn’t make me feel really gross after consuming it.

My brother always makes interesting choices here at Gourdoughs. Although he is pretty predictable in what he will get. It always will involve fruit. Some of his favorites include Son of A Peach and Granny’s Pie. I don’t blame him because fruit serves as a perfect topping on top of these delicious cake doughnuts. This one here is the Carney. The doughnut has apple pie filling, cream cheese icing, caramel, and dry roasted peanuts. I get that the peanuts would be at a carnival, but I don’t really see apple pies being at carnivals. I like the name though because it is a fun play on it.

I ended up sneaking a bite because he left his doughnut with us, so he could eat it tomorrow. I really thought this was an interesting tasting doughnut. I didn’t think it was spectacular like all of the other doughnuts I’ve had at Gourdough’s, but I did think it was okay. I think all of the different things on the doughnut didn’t mix that well together. Maybe the doughnut should have been stuffed with the apple pie filling instead of having it as a topping. I felt like something was missing, but I couldn’t put my finger on it.

You can’t go wrong by stopping at Gourdough’s, so definitely next time you are in Austin, hit up this place. Also you can get a lobster roll or tacos since two other trailers share the lot with this goldmine.

Stuffed French Toast (Healthy Version)

Hey ya’ll! I am writing this from my bed because I’m so sore. I have started the Insanity workout program and oh my, it is not for the weak. I’m totally weak plus I’m sort of out of shape since I haven’t exercised a lot since I’ve been having problems with my arthritis. However I have been feeling better, so I thought why not do this? Well it is insane, literally. It is such a good workout though. After every video, I feel so refreshed and exhilarated that I survived the day. This leads to a sore Lindsay. Totally worth it though. Today I have a delicious recipe for you and a healthy swap.

I have made you guys a stuffed french toast recipe. Ihop serves a wide variety of stuffed french toasts that are packed with a ton of calories and fat. The combo at Ihop contains around 1450 calories and 76 g of fat. WOW. Now that is almost the average woman’s entire day of calories. Obviously that isn’t going to fill a person for the entire day, so it is definitely a waste of calories. Just the french toast only has around 490 calories and 39 g of fat. That is still a ton of unnecessary fat in a dish. Therefore I decided to make ya’ll a low calorie option that is just as delicious or maybe even better.

Elvis Stuffed French Toast

2 slices of 45-50 calorie bread (I used Nature’s Own)
1/2 c. of liquid egg whites
1-2 tsp of cinnamon
1-2 tsp of vanilla extract
2 tsp of fat free milk
2 tbsp of prepared PB2
1 banana
a sprinkle of chocolate chips
1 tsp of sugar free chocolate syrup

1. In a small bowl, mix the egg whites, milk, sugar, and vanilla.

2. Spray a pan with non-stick cooking spray and heat on medium.

3. Dip the bread into the bowl until both sides are covered with mixture. Then place the slices of bread into the pan. You may have to do one piece at a time if your pan is too small.

4. Prepare the PB2 as the bottle instructs. I usually do 2 tbsp of powder then 1 and a half tbsp of water. That makes it more runny, but if you want it thick only use 1 tbsp of water in the mixture.

5. Spread onto one slice of the french toast. Then slice up a banana and place the slices on top of the peanut butter. I like mine orderly, so I make it 3 by 3 then just layer the extra bananas on top of the bottom slices.

6. Sprinkle a few chocolate chips on the bananas then top with the other slice of bread. Place the sugar free chocolate syrup on top of the bread lightly and enjoy.

You can put syrup on it if you want, but I don’t have sugar free syrup at home, so I just decided to opt without it. The dish is really rich without it, plus you have the syrupy effect from the creamy peanut butter and the chocolate syrup.

Yes, this is the new breakfast in bed I’ve decided. Someone needs to make me healthy stuffed french toast to deliver to me in bed. I know I have big dreams. It’s okay I’ll just make it myself and bring it back to bed with a cup of tea. Who needs anyone when I have my amazing self. This dish only contains 275 calories with 3.5 g of fat. Whaaaaat?? Such a better option than eating out at Ihop in my opinion. I know the butter and fat taste delicious, but there is no nutrition there. With my healthy stuffed french toast, you are getting a healthy serving of fat from the peanut butter, good fiber from the bread, and a serving of real fruit (because lets be honest, you know Ihop uses packaged/processed fruit).

Just looking at this makes me drool and get hungry. Except not really because I’m full from eating it. I love healthy filling breakfasts. It helps you start your day on a good note, plus it kick starts your metabolism for the day. If you have problems eating breakfast in the morning, you probably need to make it more enjoyable. This is definitely an enjoyable recipe to try out. It only takes a few minutes to make too. The longest part is mixing the PB2 and dressing it up. You could probably make the french toast the night before, warm it up the next morning, and just put your toppings on in the morning. Time saved. I’m a genius. I just now how rushed a lot of people feel in the mornings. I experience that quite a lot especially when I’m running behind to go to school. None of that anymore…oh wait yeah graduate school haha. I guess I have mastered the morning rush though. I hope everyone has a fantastic Tuesday. I’ll be doing my Insanity workout a little while later and I’m going to add in some hip hop abs and pop pilates. Working out is so great, maybe I’ll do a nutrition fact Friday on exercise. Brain is churning.

WIAW (More like What Trailers I Ate)

Hey ya’ll! It is my favorite day of the week. What I Ate Wednesday. Since this is my first one back, I’ve decided to make it extra special. It is going to be based around…drum roll….TRAILERS. Ya’ll are probably sick of my love for food trailers, but I think you are just going to have to get over it. Shout out to Jenn for allowing me to post my love for trailers on her blog on Wednesdays. Lets get this WIAW party started.

capital-city-bakeryOh you have seen this trailer on my blog before? That is right. I love this trailer more than anything. Capital City bakery has a sweet spot in my heart. Not only because of the delicious cupcakes they serve or the cinnamon rolls, but the brownies with various toppings are mind blowing.

DSC02712I know your stomach is probably growling out of control right now staring at these beauties. Let me tell you, that woman knows how to make some amazing brownies. Seriously. The two brownies in this box are raspberry and peanut butter. Both icings are decadent and different in their own way. I couldn’t even pick what brownie was my favorite because they were both so delicious, I couldn’t handle it.

DSC02710My brother had a champagne cupcake. It was also equally as delicious, but in a different way. The hint of champagne was not strong enough to get you tipsy from a cupcake, but it was just enough to have that sweet bubbly flavor. I’m glad I got to have a bite of it.

DSC01572Oh the peached tortilla. Heaven in a food trailer pretty much. I discovered this place once at a farmers market, so I was excited to have run into this amazing trailer again in my life. Their menu spans from sliders to various kinds of asian inspired tacos. Tacos? Yes, sign me up. Also sometimes they sell some baked goods from a small company. I was once blessed enough to have a banana fosters cake pop. It was amazing as it sounds.

DSC01571Their bahn mi taco could give Taco Deli a run for their money. Unlike the pork in that taco, the pork in this taco is shredded. You get more bang for your buck. You know how we Jews feel about that. Also the sauce on top of it is amazing. I love a good sauce. Typical to a bahn mi taco, there was shredded carrots, daikon, and some cilantro. It was delicious. I could definitely eat a few of these.

DSC01580Cool Haus, one of the more popular trailers that is around the US. I think there is one in New York City and Los Angeles. Who doesn’t want a custom ice cream sandwich? Especially when the flavors of ice cream are so wacky like balsamic fig, candied bacon, and spicy pineapple. Then you get it sandwiched in between cookies such as chocolate chunk pretzel or smore’s. If you don’t want that you are obviously a crazy person.

DSC01581 We ended up getting the balsamic fig and marscapone icecream sandwiched in between snickerdoodle cookies. It was actually really delicious, I’m not gonna lie. At first I was like what is my brother thinking? Those are some weird flavor combinations, but the cinnamon flavors the snickerdoodle went perfectly with the fig and marscapone cheese in the ice cream. It was pretty good. This isn’t a trailer I would seek out on my own, but if I passed by on a hot day then I would definitely stop in.

This is all I’m going to give you for today. Trust me I got a lot more food trailers up my sleeve, but ya’ll probably wouldn’t be able to handle it if I threw them all on you at once. I hope everyone has a good wednesday. Only one more day left of class! Thank god. School is really exhausting especially when it is your last semester (wooooo).

WIAW #5 and Trader Joes Finds

WOW! I haven’t blogged in a week. That was like a mini uneeded vacation. I partially didn’t blog because I was in Dallas a couple of days, and I was out having fun instead of having time for my computer. Also this is going to sound totally crazy, but at my mom’s my computer does not work with the internet there, so it is literally impossible to blog there unless I have everything pre-loaded and just hit publish. Obviously I am not that advance, but I am back. It is What I Ate Wednesday, so I definitely had to pop in for that. Plus I have a ton of recipes coming ya’lls way and a trip to this amazing Israeli market in Dallas. Shout out to Jenn for hosting this day, she really is awesome for coming up with this.

Tropical Sunrise Oats. These oats are ridiculously tasty, and the mix of orange, pineapple, and mango definitely gives you a boost of energy in the morning. Of course I had to throw in some chocolate chips to give it that sweetness that I’m always craving.

For lunch it has been my classic peanut butter, raspberry jam, and banana sandwich. This is my go to meal when I don’t have a lot of food in my pantry and I want to eat something that is filling, but low calorie. This always hits the spot to. It is something about that classic combination of peanut butter and bananas. The sweetness of the jam makes it that much better.

Hello favorite snack. Arctic Zero Cookies and Cream topped with gluten free chocolate chips, marshmallows, and banana slices. Oh man. This is definitely one of my top two favorite flavors of this “ice cream”. It hits the spot on a hot day, and you totally aren’t breaking the bank calorie wise. Since the whole pint is only 150 calories, if you gorge down the entire thing it isn’t that bad.

Let me get to the good stuff. The Trader Joe’s finds. Oh yes. It was a glorious moment when I stepped out of the car to enter this beauty. Finally Trader Joe’s has reached Texas. Now I just need one in Austin. Luckily San Antonio is getting one in September, and that is only about a 40 minute drive from my apartment. Success. I will def be doing like monthly drives to that Trader Joe’s and the two story forever 21 (gotta through in some shopping).

Meet my best friend. The falafel chip. I have a deep love for anything falafel, as we can see from my frequent trips to St. Pita’s. These chips are life changing. They actually taste like falafel. It is quite scary actually to imagine how they get all the flavors of a falafel and put it in to a small chip. I’m not complaining though because these are amazing. I’ll probably have to stock up on these when I go to Boston – I can just see myself now, carrying like huge trader joe’s bags onto the airplane alongside a Mike’s Pastry box. Laugh as much as you want, but I will have all the goods.

So I actually have a lot of best friends because these guys are also on the top of my list. Banana slices covered in dark chocolate. You really can’t get better than that. These are one of the main reasons we went to Trader Joe’s. My entire family loves them, and we even finished one box before we left Fort Worth…..we were hungry. If you ever go to Trader Joe’s, I definitely recommend these.

There is a trend here. Chocolate and snack foods. Who needs meals when you have dark chocolate bars? This is healthy. Really though. The higher percentage of cacao the better for you. Chocolate has shown to be very important in heart health, so go out there and buy yourself some chocolate (make sure it is cacao).

These are white something something peaches, but man they are delicious and really juicy. The fruit is one of the reasons why I love TJ’s. You can buy apples for 68 cents a pound! Um what? YES. I think my mom and I got about 14 apples for pretty cheap. Then we got these peaches for like 50 something cents, which was definitely a smart buy. The only other fruit we got were strawberries, and they were perfect.

These were an amazing found. I also got the mahi mahi ones too. Since I’ve gone pescatarian, I’ve been on the search for a good frozen fish burger. When I saw these at Trader Joe’s I was so excited. They are really low calorie, delicious, and provide a ton of healthy nutrients like Omega-3’s.

Welcome to heaven. You can thank me later. This is probably the most amazing discovery in the entire world. Oh god I had some of this on a toasted english muffin. Mind blowing. Seriously, run to your local Trader Joe’s and stock up on this stuff immediately. Oh man I could totally have a cabinet just dedicated to this stuff because it is just that amazing. I can eat it straight out of the jar, on oatmeal, on pancakes, or on top of pretzels. The combinations are endless. You will be so happy you bought some for yourself.

Some of the other Trader Joe’s finds we had were pita chips, rosemary raisin chips, two different types of cheeses, and two buck chuck of course. Can’t go to a TJ’s without getting some of that two buck Chuck. I used to go to Boston, and load up my suitcase with this stuff. Yes, I’m cheap and I like cheap tasty things.

WIAW #4: The Breakfast Club

Hey ya’ll! It is that awesome time of the week: What I ate Wednesday. Shout out to Jenn for hosting such an awesome blog link up party online. While everyone else is having epic Wednesdays, I’m sitting around my apartment all day waiting for the energy company to come hook up the gas. Yeah, no fun. Luckily I have my computer, books, and my roommate’s cat to keep me entertained. Let’s get to the good stuff. Today I’m doing a post all about breakfast. Seeing as it is my favorite meal of the day, I thought it was appropriate. However, I’m also going to give you a little nutrition lesson too.

Black Forest Oats Parfait

Breakfast is probably the most important meal of the day because it gives you a healthy start to the day. Most people think that by skipping breakfast, they will be able to lose more weight. However this is actually a myth. Eating breakfast actually increases your metabolism, which in turn helps you lose weight quicker. Also, if you don’t eat breakfast by the time lunch rolls around you are hungrier and therefore more inclined to eat more food than you would have. This leads to more weight gain. Obviously the key point here is to eat breakfast, but there are also many other benefits that can be connected to eating breakfast.

Studies have shown that breakfast has a huge impact on cognitive function. Most studies have been done on school aged children showing that by eating breakfast they perform better on tests and in school. However this information can be used for adults too since our brains need fuel to function properly. Breakfast is also connected to concentration. Studies have shown that people who eat breakfast have an easier time focusing on the task at hand compared to those that do not consume a morning meal.

S’mores Oats

Another reason that breakfast is an important meal of the day is because of energy. By eating breakfast, we are supplying our bodies with nutrients and substance. From this, our body gets energy. When you sleep at night, the body goes through seven to eight hours without eating, so it is important to eat breakfast. Otherwise you will lack the energy needed to get through the day. No one wants bad grades or to get fired, so EAT Breakfast.

Pistachio Pancakes

A healthy breakfast doesn’t have to take long to make or be super fancy. All you need is plenty of fiber and a healthy source of protein. These are things that help you stay satisfied for a long period of time, provide a good amount of energy, and keep your metabolism going. For fiber, one can consume whole grains, fruits, and vegetables. For protein, there can be a variety of sources based on the diet. Obviously you can have meat, but other choices include beans (for vegans and vegetarians), eggs, cottage cheese, greek yogurt, or tofu (I saw a great recipe at Jenn’s for Tofu french toast – definitely going to try it out soon).

The lesson is you need to eat breakfast. I find that breakfast is fun. Don’t worry. I will share all of these recipes pretty soon! I wouldn’t show you pictures without telling you how to make it. I hope everyone has an awesome Wednesday. I’m just hoping that the energy guy comes soon, so I can finish unpacking and doing stuff that I need to do.

WIAW on Your Healing Diet

Hey ya’ll! One of my favorite parts of being a part of the healthy living community is the greatest day of the week: What I ate Wednesday. Thank you to the lovely Jenn for hosting such a fun day where everyone shares what they have been eating. I especially love the recent themes of sensible snacking because what can I say, but I love to snack. My brothers call me snacky or snack monster. It is all out of love or at least I hope it is. Anyways lets get to the fun of what I ate while following Your Healing Diet!

Thank god on Your Healing Diet you can consume whole grains because I might die if I was not able to get my weekly bowl of oats (more like 3 times a week oats). For this week I had a typical creative Lindsay bowl of oats that was super delicious. They are Apple Pie Cheesecake Oats. The recipe will definitely be coming soon to an audience near year, but everything in the bowl fit in with the diet since it was just oats, almond milk, water, cooked apples with cinnamon, and some other delicious things. Oatmeal is definitely something great to eat if you need to be full for a long period of time because the fiber in it provides that satiety to keep you going.

Here is my snacking. Since I have class from 8 am to 2 pm every single day of the week, I have to pack a bunch of snacks to eat throughout the day. The taffy isn’t on Your Healing Diet, but I thought I deserved a little treat of an apple and cinnamon flavored candy. My other snacks are a granny smith apple, a pear, a bag of cherry tomatoes, a bag of cherries and blueberries, and a chocolate covered cherry granola bar. The granola bar is a little processed, not on the plan, but it has a lot of fiber and I think kashi is one of the better options out there if you are going to consume any processed foods.

This is my favorite sandwich ever. I love making peanut butter and jellys with fruit in the middle. I used 100% whole wheat bread, PB2, bananas, strawberries, and an organic all natural raspberry jam from central market. Totally on the plan and totally delicious. I eat this as a snack sometimes, but I also have it as a lunch like I did this day. I served it with carrots and celery, which are not in the picture. I guess I like to eat rabbit food.

To be honest, this is not really on any plan. Whatsoever. Do I care? Not really since I was given a box of truffles by a really nice guy. They are lava cake truffles and they are mind-blowing. Seriously. Go out and get one. Godiva offers a free membership, where they give you a card and you can go each month and get a free truffle. Umm helloooo. Best deal. My mom and I go every month together. It is one of our fun mother daughter traditions.

How can you say no to that? When you bite into the decadent chocolate truffle there is a thick creamy chocolate and a liquidy chocolate that oozes out into your mouth when you bite into it. The truffle is also dusted in light powdered sugar. I only eat one every few days, and I justify it on Your Healing Diet by saying that chocolate is good for you. Ha ha ha.

For dinner, I’ve been enjoying a nice tofu stir-fry. This is definitely on Your Healing Diet. Since it is a mainly plant-based diet, if you want something that is meat like then tofu is your way to go. I personally love tofu, so following this plant based diet is not a problem. I just chop up my tofu into small squares, throw it in the pan, dump in the broccoli, and add some type of sauce to mix it up in. I usually serve it over a bed of brown rice or I just eat it all by itself.

Breakfasts Are For Champions

Hey ya’ll! Hope everyone is having a fantastic Monday. I had an accounting exam today. Gross, I know. Anyways since Your Healing Diet is based on a mainly plant based diet that means you can consume a lot of whole grains since you are not consuming all the calories from protein. To me this means AWESOME breakfasts. As most of you know from Surviving Candyland that I love eating breakfast, especially whole grains like oatmeal, so this is one of my favorite parts of following the diet. Also in general it is advised to eat breakfast daily because it helps boost your metabolism in the morning to help you lose weight!

So, what did I eat for breakfast on Your Healing Diet? You are going to be shocked because it isn’t a bowl of oatmeal. I made PANCAKES. Not just regular pancakes either, but Elvis pancakes.

When something is described as Elvis it means that it has chocolate, peanut butter, and banana. I made chocolate peanut butter pancakes with bananas and chocolate chips topped with a drizzle of peanut butter and bananas.This is definitely one of my favorite combinations because the natural sweetness in the bananas gives a nice balance to the saltiness of the peanut butter. Plus chocolate chips in anything is pretty great in my opinion.

Elvis Pancakes:
1/2 c. Whole Wheat Flour
1/3 c + 1-2 tbsp of Unsweetened Vanilla Almond Milk
1/2 tsp. Baking Powder
1/8 tsp. Salt
3 tbsp egg whites or egg substitutes
1/4 tsp. Baking Soda
1/4 tsp. Vanilla extract
1 packet of stevia
2 tbsp. Chocolate PB2
Handful of gluten free, dairy free chocolate chips
Half of sliced banana

Toppings:
Other Half of Sliced Banana
2 tbsp PB2 + water (enough to make it runny)

1. Mix all of the dry ingredients in one bowl.
2. Add in all of the wet ingredients + chocolate chips + slices of banana.
3. Mix well together.
4. Using a 1/3 measuring cup, portion out batter onto frying pan (usually makes about 3-4 medium pancakes).
5. Flip over when upper side has showed bubbles in the batter and the bottom is lightly browned.
6. Cook until done.
7. Layer the pancakes on the plate with one on bottom, then slices of banana, then another pancake, etc until you are at the top drizzle the PB2 sauce over it.

These pancakes definitely made waking up at 7:30 am on a Saturday so much better. Not only are they delicious, but it pretty much follows a healing diet. Even the peanut butter is on the plan because the only ingredient is peanuts that have been crushed. I love one ingredient lists on food labels! The only thing that isn’t on the plan is the egg whites, but it is such a small amount that it should not effect my diet that much. I love that Your Healing Diet is more of a lifestyle rather than a strict diet plan. I love that I get to enjoy healthy delicious food while attempting to heal my body.

Yes, I cleared my plate. That is how good these are. Filled with tons of flavor and beneficial ingredients:

Bananas: Not only do bananas provide a large amount of Potassium in the diet, but they also offer a substantial amount of energy. provide bowel health, and help reduce the acidity in the stomach that may have been created by other foods.

Peanuts: Peanuts are great for hearth health, provide a source of antioxidants, and help reduce the risk of stroke.

Whole Wheat: Helps reduce the risk of metabolic syndrome, lower type 2 diabetes, lessens chronic inflammation, and assists with bowel health.
