Concrete Jungle and Snowcones

Hey ya’ll! Sorry I haven’t been around lately, but I have been on a whirlwind of events. I ended up deciding to go to graduate school at Columbia University in THE New York City. Best decision of my life. I have recently moved up here (recently being this past weekend, I drove all the way from Texas – woooo). I’m now living with my best friend from BU and another girl that went to BU. We all three go to Columbia, but I’m the only one that studies nutrition. I love my program! It is so amazing and I will definitely go on and on and on about it, but right now I’m going to share my first NYC adventure with ya’ll!

My roommate, Carrianne, and I ended up going to Greenwich Village to go on a hunt for something we needed for the apartment. However we ended up at this really cute pet store that had a ton of puppies on sale. Of course we had to go in and look at all of them just for fun. We definitely will never be getting a dog up here, but it doesn’t hurt to look at them. This cock-a-poo was so cute. I was tapping the glass with my finger and she was chasing it around. You could tell she did not want to be in the container. I wish we could have taken her out for a walk. I have a weak spot for adorable little puppies. After we had our fun, we went on the real adventure: to get a snowcone (ya’ll shouldn’t even be surprised at this point).

Ya’ll know how I love snowcones, especially New Orleans style. This place was so cute. It was called Imperial Woodpecker Snow-balls. It was tucked away in a street filled with restaurants. It was sort of like a food stand just out on the street. The guy was sitting there with the ice machine in front of him and all the bottles of flavors. This was the huge menu of flavors! It was so hard to pick what I wanted. I am definitely going to have to venture back to Greenwich just to have one of these snowcones before the September 15th close date.

I eventually decided to go for a booze theme and get flavors that were named after drinks. I chose margarita and mojito. I loved that the snowcone came in a takeout container. It was massive and definitely worth the 5$ price. It was sweet and tangy. The flavors matched each other perfectly as did the color. It was just a visually appealing snowcone with phenomenal flavors. I was in heaven as we walked around Greenwich looking at shop windows. I wish it was a never ending snowcone.

Just look at the majestic power of this container of shaved ice! It is seriously delicious. There are not enough words to describe the flavor sensation I experienced as I bite into this. The flavors were less fake and syrupy. It tasted as if they had made the syrups themselves instead of ordered them from a standard shaved ice company. They actually even had all natural flavors such as jalapeno watermelon and Meyer-Lemon Basil. Ummm yes. Who doesn’t want exotic flavors like that on a cup of ice?

Imperial Woodpecker Sno-Balls is the place to go! If you are in NYC currently, make it down to Greenwich village by Sept 15th to enjoy this tasty treat. The sad thing is that the manager is moving out of NYC, so this will be the last summer with Imperial Woodpecker Sno-Balls. I know, right? I discover something delicious in the city, and it is already leaving me! Oh well, I am going to make one more trek out there in order to try another flavor. Carrianne ended up getting the King Cake flavor and said that it was quite delicious!

Later that night, we were originally going to go out, so we went to this tapas bar, Marcha, in our neighborhood before going out. We ended up getting a couple of cocktails and tapas. Turns out that we didn’t make it out, but we didn’t really care because this place was amazing. The music was great, the cocktails were even better, and the food was so good. I ordered a colada type of drink that had hints of pineapple, coconut, and mango in it. It was like drinking pure fruit with alcohol hidden throughout it. Carrianne got a strawberry drink with champagne and some other alcohol in it. It was delicious, of course.

We got an order of patatas bravas. I know this doesn’t look like all the pictures of my patatas bravas from Spain, but this dish was equally delicious. It had a spicy aioli drizzled across perfectly seasoned and cooked sliced potatoes. We inhaled these. The sauce was so creamy and rich. The spiciness was not overpowering either, which was amazing. We also ended up order croquetas, specifically ones with goat cheese, tomatoes, and a red wine dipping sauce. Holy heck! These things were amazing. I wish I would have taken a picture, but at this point we were on our second cocktails and feeling good. I’m so glad that this place is one block from my apartment. We decided last night that this will definitely be one of our neighborhood joints.

I’m so glad to be living in the wonderful city that is New York. Ya’ll we be joining me on my foodie adventures to test out restaurants and cook in my apartment. I am going to be making a ton of different recipes, recreating dishes that I try, doing epic restaurant reviews, and of course sharing nutrition tidbits from my classes and life.

WIAW (Life Without Plastic Bags)

Hey ya’ll! It is that time of the week again when bloggers around the world share what they are eating. It is one of my favorite link-ups, known as What I ate Wednesday. I bet there are other goods ones out there, but I just love to see what everyone is eating to get inspiration for recipes and blog posts. Thanks to Jenn for hosting this fantastic day! photo(3)Since school is pretty much over for me, I ended up going to my mom’s to study for finals and what not. Well I decided that I was going to cook up a storm in the house and make a ton of new recipes to share with ya’ll. So I drove over to the local HEB in my neighborhood to load up on groceries, but little did I know that there are NO more plastic bags (disclaimer: Yes, I actually knew, but I forget because this is sort of ridiculous). I’m all for helping the environment, but they should have plastic bags on hand just in case people forget. I have a million reusable bags, so I’m not going to spend money to buy another one just so I can carry my groceries like a normal person. Nope, I totally put everything back into my cart and rocked the no bag look. I got some stares.

photo(6)I was not going to let the plastic bag problem stop me. Although once I got to my house, I got reusable bags to help get everything out of the car. Now to the yummy part of the story. For breakfast I had chocolate covered strawberry cheesecake oats. Umm yes. I have an obsession with cheesecake oats (fat free cottage cheese + oatmeal). It seriously makes the oatmeal have a creamier and richer flavor to it.

photo(5)Close up, in yo face. You can’t go wrong with chocolate chips and strawberries. I have so many oatmeal recipes to share with ya’ll, it is ridiculous. I need to step up my oatmeal sharing game. Heck, I have so much to share with ya’ll. Maybe I’ll start posting two-a-day. That is a lot of effort for me, so probably not. Senioritis problems. You would think that maybe my second senior year I wouldn’t be so lazy, but no I think I’ve just gotten lazier as time goes on. At least graduate school will whip me into shape.

photo(4)So my family calls me snacky or snack monster, which is actually pretty nice I think since it could definitely be a lot worse. Hello, my name is Lindsay and I am addicted to snacks. I actually have an awesome post planned for the near future about healthy snacking. Since I love to snack, I decided that I need to come up with more healthy choices for snacks. Therefore apple nachos have come into the picture. You can do a ton of varieties with these bad boys. I decided to go the chocolate and caramel route, but you could definitely do granola, chocolate chips, etc. Pretty much anything goes good with these bad boys.

photo(2)Yes, I am one of those weird people that love salads. I could eat a salad for lunch and dinner if I could. The key to having a good salad is building it up with tons of healthy toppings. This is my healthy version of a Waldorf salad. It has grapes, apples, walnuts, celery, and chicken in it. Such a winning combination. Usually there is a type of gross cheese in it (yes, there are some gross cheeses out there), so I went sans cheese on this one.

photo(1)Three cheers for another healthy snack. I saw this on Pinterest a while ago, but it was for camping. Who needs to go camping to make a delicious treat like this? Not me. I made my version of a banana s’mores with marshmallows and chocolate chips. It was delicious. I will share how to actually make this when I post about healthy snacks, but just looking at it is making me drool and want another one. Like the apple nachos, you can do tons of combinations with this one.

photoYou know just staring at this picture you want the recipe. Too bad you are going to have to wait a few days. I’m trying this whole thing were I am organized about my blog posts, and so far it is going pretty well. It just means that I won’t be posting up this recipe yet. However it is spaghetti squash pad Thai with tofu. Yes, it is as amazing as it looks. I’m seriously getting excited just looking at it because it is a beautiful dish. Plus I remembered I have leftovers in the fridge! Go me.

photo(7)MWAHAHA the snack monster has arrived. This is a not-so healthy, but not-so fattening snack. I have a passion for snowcones. Maybe a deep love too. I love going around to try all the snowcone stands in Austin. I have discovered a few more to try out and review, but this is from one of my favorite stands: Casey’s New Orleans Snowcones. You know I have to represent the city I was born in, so I’m a loyal customer. Plus these are just so darn good. This one is a strawberry cheesecake snowcone. The flavors are so rich in it and the ice is soft. I really despise when there is hard ice that doesn’t soak up the flavor. Lame.

I hope everyone is having a fantastic Wednesday! I’m currently studying for my Medical Nutrition Therapy final and make up exam. Yes, I have two exams tomorrow in the time period for one final. I think I can pretty much rock it. Although my make-up exam is on enteral and parenteral feedings + some other lovely junk about the GI system, so it is not the most pleasant topic. Hope ya’lls day is less gross than mine!

Breakfast and Boys

Hey ya’ll! I’m so happy it is the weekend. Although now every day will be like the weekend since I’m out of summer school. Onwards to finding a job, but until then I will be enjoying my summer break.

Since all I post is pancake recipes, ya’ll must think that is all I eat. I swear I eat other food. I do, however, have another pancake recipe for you. Haha. I can’t help it that I love my pancakes and record them more than other things.

Lemon Raspberry Pancakes
1/2 c Whole Wheat Flour
1/3 c Unsweetened Almond Milk
1/2 tsp baking powder
1/4 tsp baking soda
2 tsp lemon juice
1 packet stevia
3/4 c. raspberries
lemon zest
1/4 tsp vanilla
3 tbsp egg white substitutes

1. Mix all dry ingredients into a bowl.
2. Add in wet ingredients and stir well.
3. Mix in 1/2 c raspberries into the batter.
4. Pour batter onto pre-heated pan and wait to flip until bubbles appear on top.
5. Flip over and cook until lightly brown.
6. Smash with 1/4 c raspberries with a little of water and some raspberry jam to make a thick syrup to top the pancakes with.

These pancakes are delicious. If you are a fruit person then this is the way to go. It is just the perfect amount of sweet with a good amount of tartness.

I’m in Austin! So excited. This weekend is going to be pretty fun. Especially because I get to see some sexy men tonight….in the form of Magic Mike.
Do I really care what this movie is about? No. Do I even care if it is good quality? No. Do I care that there are tons of hot shirtless men on the screen? YES. I’m excited plus I’m going with two of my friends who I haven’t seen in forever, so it will be a good time.

Of course what is the first thing I do when I get to Austin? Go get a snowcone with my family.
I got cupcake. OMG. It was amazing. It tasted like liquid cupcake. It would have been even better with condensed cream on top. Oh well. Next time. My mom got the apple pie one, my younger brother got a horchata with cream, and we got a wild cherry to go (I know boring person). Ice Queens is going to be my new spot in town. I even have my own punch card with 4 punches on it. Winning.

Snow in the Summer

Hey ya’ll! My last week of school is half over. I’m so excited that I have survived. I may not be surviving this heat though. In Texas, it has ranged from 104-106 almost every day. Even though I’ve lived here most of my life, I am definitely not used to it. In order to deal with this awful heat, I decided to sample all of the amazing New Orleans style snowcone spots in Austin. This list includes Sweet Caroline’s, Casey’s, and Ice Queens. Let it snow, let it snow, let it snow.

First up is Sweet Caroline’s. There are multiple locations all around Austin, which is really nice because sometimes it is a hassle to trek all the way out to East Austin for a snowcone. Luckily for me, there is one down the street from where my mom lives. My mom and I decided to head over here one afternoon because I was craving a snowcone.

My mom got the Hawaiian wedding (one of the special flavors at Sweet Caroline’s). It was blue coconut, wedding cake, coconut, and it was topped of with cream. Cream makes everything better in my mind. I really enjoyed this combination of flavors though.

You remember from a few posts ago that I got the Hulk: Grape, Green Apple, and Pineapple. It was delicious. Not to mention that there were nerds all in the middle of the snowcone. Yes, I said nerds!
Hello wonderful sweet candy that is hidden in my snowball. I loved it. That is probably my favorite part about Sweet Caroline’s. They have crazy flavor combinations. The Hulk was just one of many. They had mixed flavors with gummy bears, a keep Austin weird flavor, a sweet Caroline’s flavor (strawberry and cream), and so many more. While I love the creative flavors, I probably will only go here because of convenience. It isn’t my favorite snowcone location.

Next up on the snowcone adventure was Casey’s New Orleans Snowballs. This has been a family favorite for many years. Like Sweet Caroline’s, they have their own special flavors that range from Strawberry Cheesecake to Boston Creme Pie. There is only one location in Austin, you have to use cash, and I’m not gonna lie but it looks super sketchy.

I decided on the grapefruit snowcone. It has a tart, but sweet flavor. Unlike my family members, I always opt to get a fruit flavor at Casey’s because they are so tasty and sweet. If you do not want to overload your sweet tooth, go with a Pineapple, Mango, or Grapefruit snowcone.

My brother got the Boston Creme Pie snowcone. I’m not gonna lie because this is always delicious. It has a couple of syrups and is then topped with cream. For so many years, this snowcone has been superior in my family and I’s eyes. The rich creaminess mixed with chocolate is the perfect treat for a hot summer’s day.

The last snowcone stand on the list is Ice Queens. I have been wanting to go here forever. No one would go with me. Oh it is in East Austin, we don’t want to drive out there or oh I’m full I can’t eat a snowcone right now. Well yesterday after my doctor’s appointment, I convinced my brother to go with me. Unfortunately, we decided to go at the worst time ever. It was 5 o clock traffic. It was totally worth it though. We pulled up to this lot behind a building and there was a red trailer waiting for us.

Yes, this is greatness in a cup. I got kingcake topped with condensed cream. When I was deciding what type of cream to get on top of it, the woman in the trailer was like do you want to eat something that tastes like a glazed donut? Well yes I do. That is exactly what it tasted like too. It was amazing. I was sold. This is now my favorite snowcone stand in Austin. I will drive out here just to have this sweet taste again.

My brother got apple pie topped with caramel. Oh man oh man was this perfect. It had like an apple cider spice taste and mixed with the caramel it was the perfect combination of tart and sweet. He was in heaven. Even though he wanted to kill me for making him go during the traffic, he was happy in the end.

Also Ice Queens gives punch cards. I love getting free things. Once we get 9 snowcones (this definitely won’t be hard to do), we get the 10th one free. I’m thinking of going this weekend already. I miss it so much. Besides rewards, the flavor list is AMAZING: cupcake, cake batter, apple pie, egg custard, pumpkin pie, and organic flavors. If you are ever in Austin during the summer, you must go here.

WIAW #2 The Snack Attack

Hey ya’ll! It is halfway through the week, which means it is almost over and today marks What I ate Wednesday. Thanks to Jenn for hosting this fantastic day. I really don’t know what I would do in the mornings without having a bunch of food pictures to stare at while I ate my breakfast before classes. WIAW always makes my day so much better. For breakfast, since I woke up at my mom’s place, I decided to have an omelet. Doesn’t that cheese look so oozy and good? It was a pretty plain omelet since she was lacking a lot of vegetables in the fridge, but that didn’t bother me. It was just egg white substitutes, onions, and a 1/3 cup of cheese. The cheese to me is what makes the omelet the best.

For one of my mid-day snacks, I decided on a Kim’s Magic Pop. These can be found in the most obscure places, but I recommend that you go get them immediately. They are a low cal snack, about 10-15 calories, that come in a bunch of flavors. They have strawberry, cinnamon, plain, and onion. I have the strawberry and I topped it with laughing cow strawberry cream cheese and banana slices. It is the perfect snack to tie you over.

For lunch I had a snowcone. Yes not the healthiest choice, but it was about 106 degrees outside and I needed a cold treat. This is from Sweet Caroline’s, which is down the street from my mom’s place. I got the Hulk, which is grape, green apple, and pineapple with nerds in it. It was delicious and hit the spot. I’ll actually be doing a review of New Orleans style snowcones pretty soon!

Cherries are probably my favorite snack. They are so tasty during the summer. The only problem is that they are so freaking expensive. Give us our cherries, but at a discount pretty please. I mainly buy them at CostCo (well my dad does) or I get them on sale at the grocery store. I really wish the other type of cherries would go on sale because I love the white ones.

Man I was totally being a snack monster. It was so hot that I needed to make myself an ice cold smoothie. It was my Very Berry Chocolate Smoothie, which I’ll share the recipe soon because today is just all about pictures and sharing our meals. It really hit the spot and it was also massive. It filled up my longhorn cup. I got to use a straw too, which always makes me happy (You can laugh at me now because I am five years old and love straws – I have a massive bag in my pantry).

Mmmm just look at it, so tasty. If I didn’t have a straw, I probably would have eaten it with a spoon, which is my second favorite way of eating a smoothie or shake.

For dinner, I had a chicken burger topped with jalapeno cheese and caramelized onions and mushrooms. This is probably one of my favorite meals. Mainly because I just love caramelized onions and mushrooms, but also because the spiciness of the cheese gives this meal a little kick. Right now I’m trying to eat all of my meat products, like these burgers, in order to clean out everything but fish products so I can go pescatarian.

The most delicious snack in the entire world. And my brothers wonder why I’m a snack monster? Well when you eat stuff like this obviously you love snacks. This is greek yogurt with sugar free fat free butterscotch pudding powder. Then I add in sliced strawberries and a couple of gluten free chocolate chips. This is the bomb. I usually love to mix up the pudding flavors every week like to lemon or pistachio or chocolate. Everyone should have this as their bedtime snack!
